Joining you on this incredible trip is chef Junior Borges. Born and raised in Brazil, Junior has traveled the world as inspiration for his cooking. He graduated from the French Culinary Institute in New York, and then spent more than a decade in some of New York City’s finest restaurants before landing in Dallas, where he leads Meridian — the city’s most acclaimed new restaurant. In 2023, Junior was nominated by the James Beard Foundation in their most prestigious award category: Most Outstanding Chef. In Provence, Junior will share his passion for French cooking and celebrate all the reasons he loves spending time on the coast of France.

Raised in a small town north of Rio de Janeiro, Junior came of age as a chef in New York City, where he worked with Missy Robbins at A Voce, then became executive chef at Amali. He splashed onto the Dallas dining scene in 2015, when he was opening chef at Uchi, which earned a rare five-star review from The Dallas Morning News. Today, he’s thrilling foodies in Dallas and beyond at Meridian, which was named Restaurant of the Year by Eater Dallas and D Magazine.
Inspired by Farm and Sea
Having grown up by the seaside and around small farms, Junior has a unique appreciation for great produce and seafood. This expertise makes him the ideal guide to Provence, with its fabulous markets and seaside culinary culture.
Few chefs have the vision and nerve to do something absolutely groundbreaking, but that’s what Junior has done with Meridian — the first modern Brazilian restaurant in the United States. It’s one reason Star Chefs honored him as the “Game Changer” among all its 2021 Dallas rising stars.
Junior serves on the Culinary Council of Ment’or, the foundation led by Daniel Boulud, Thomas Keller and Jerome Bocuse that helps support young culinary careers through educational grants and opportunities. At Meridian he has hosted special events with food-world luminaries including Bobby Stuckey, Mashama Bailey and Stefano Secchi.

If your trip departs in less than 180 days, we’ll collect full payment either 30 days from when we receive your deposit, or 60 days prior to your trip departure date, whichever is sooner. What does the price include?
Six nights at unique 5-star accommodations; private travel between destinations and for all day trips and excursions; departure airport transfer; private tours with local guides and cultural experts; exclusive access and tastings; guided activities and exclusive private tastings, tours and activities; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals; gratuities for local staff.
What does the price not include?
International roundtrip airfare; travel insurance; transportation to the trip start; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverage not included in itinerary; gratuity for tour leader.
Where does this trip start and end?
Our adventure begins at the InterContinental Hôtel Dieu in Marseilles. We recommend booking flights to/from Marseille Provence Airport (MRS). On the final day of our trip, we will organize a group transfer from Saint-Rémy-de-Provence to Marseille Provence Airport.
What travel documents are needed?
US citizens are not required to have a visa for stays in France under 90 days. Just bring a valid US passport. For citizens of other countries, please check with the French Embassy or Consulate for information and requirements.
Do I need to pay a solo traveler supplement?
For solo travelers, there is a $1,800 single-supplement fee—paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.
Who is going on this trip?
Our adventures typically have between 10 and 18 guests, plus our Modern Adventure team. This specific trip is limited to 20 guests. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.
Who is leading this trip?
This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.
Do I need travel insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
What is the cancellation policy?
You may cancel before February 21, 2023 and receive a full refund minus a $500 per-person service fee. If you cancel on or after February 22, 2023, there is a 50% cancellation fee. On or after April 22, 2023 there is a 100% cancellation fee.We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (see our Terms and Conditions for full details).
