Canada’s First Michelin-Starred Chef for Mexican Cuisine, Steven Molnar
The air is thick with rich aromas—chilies, chocolate, and nuts harmonizing on the metate, weaving a luxurious mole that speaks to centuries of craft and tradition. Yesterday, you strolled through agave fields as a fourth-generation mezcalero shared the secrets of Mexico’s iconic spirit. Tomorrow promises lessons in ancient techniques from ceramic artisans and spiritual shamans alike. But, for now, as you savor the first spoonful of mole, it’s a communal feast that mirrors the spirit of Oaxaca—vibrant, rooted in community, and an exquisite ode to both the present and the past.

3 Reasons to Travel with Steven Molnar
Steven Molnar is the Michelin-starred chef of Quetzal, one of Toronto’s most acclaimed dining destinations, specializing in regional Mexican cuisine and open-fire cooking. Hungarian-Japanese by heritage, with a French culinary background, he is now receiving international acclaim for his regional Mexican cuisine. Steven honed his skills at renowned establishments like Lyon’s Brasserie le Nord, Montreal’s Toqué, and Toronto’s Bar Isabel and Bar Raval. Since taking the helm at Quetzal in 2019, the restaurant has earned a Michelin Star every year since 2022 and ranked #12 in Canada’s 2024 Canada’s 100 Best list.

Into the Fire
Guests at Quetzal’s coveted chef’s counter seats dine in full view of the kitchen’s hearth, where chef Steven and his crew work a 28-foot open flame. The goal is to create a unique dining experience—from the smell and distinct flavors of cooking over wood fire to guests being able to witness everything.
Life Changing
As a young chef, Steven spent months—years practically—traveling in South East Asia. Friends and chefs he admired kept mentioning this place called Oaxaca, as a kind of mecca for flavor, history, and culture. When given the opportunity to open a high-end Mexican restaurant in Toronto in 2019 he knew immediately Oaxaca was the only place he could learn about the traditional, and diverse, cooking techniques of Mexico.
Bridging Borders
As the first Michelin star in Canada awarded for Mexican cuisine, bringing authentic, regional flavors and hospitality to Toronto is Steven’s number one priority. Through thoughtful honoring of traditions with heirloom corn nixtamalized in-house, tortillas pressed to order, and presenting food with warmth and respect, he's elevating Mexican food and educating local diners on its unique, authentic dishes.
I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.
