Four-time James Beard award-nominated Chef, Philip Speer
The air is thick with rich aromas—chilies, chocolate, and nuts harmonizing on the metate, weaving a luxurious mole that speaks to centuries of craft and tradition. Yesterday, you strolled through agave fields as a fourth-generation mezcalero shared the secrets of Mexico’s iconic spirit. Tomorrow promises lessons in ancient techniques from ceramic artisans and spiritual shamans alike. But, for now, as you savor the first spoonful of mole, it’s a communal feast that mirrors the spirit of Oaxaca—vibrant, rooted in community, and an exquisite ode to both the present and the past.

3 Reasons to Travel with Philip Speer
Chef Philip Speer, owner of Comedor, a celebrated Mexican restaurant in downtown Austin is recognized as one of the top new restaurants in America by Esquire and Robb Report. Speer gained national acclaim as the pastry chef for Uchi and Uchiko, earning four James Beard Award nominations. Beyond the kitchen, Speer is an advocate for health and wellness in the restaurant industry, founding the Comedor Run Club and leading Austin’s chapter of Ben’s Friends to support sober hospitality professionals. Through his innovative cooking and industry advocacy, Speer is reshaping restaurant culture for the better.

Inspiration is Everywhere
For Chef Philip, inspiration can start anywhere—an aroma, a memory, a fleeting moment—whether it’s a tweet, an ingredient, or a vibrant rainbow over the coast during a morning run. His recent travels through Europe and the UK sparked ideas far beyond the plate, proving that creativity knows no bounds. Speer’s passion for transforming these moments into innovative dishes fuels his excitement in the kitchen, where each creation is an adventure.
The Real Deal
The single most important thing in hospitality is authenticity. Philip challenges himself and his entire staff to engage with what they're doing in an authentic way. In turn, they’re creating an experience for guests by having genuine dialogue, true excitement for what they’re doing, and telling a story.
Salty & Sweet
Chef Philip may be a 4-time James Beard Award-nominated pastry chef, but he couldn’t limit his work to just sweets. He’s always been a pastry chef who's blurred the line between what’s pastry and what's not. While we’re in Oaxaca, he’ll follow his nose to all things delicious like Oaxacan chocolate, masa, coffee, and everything in between.
I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.
