Acclaimed Chef Owner of New York's Ernesto’s, Ryan Bartlow
The last few days in the Basque Country have unfolded as a sensory banquet: avant-garde art in Bilbao, medieval stone castles perched above the sea, and succulent lamb roasted over grapevines, paired with velvety reds from the vines next door. Tonight, you’ll embark on a pintxos crawl through the historic bustle of San Sebastián, and tomorrow promises exclusive access to fish markets, wine estates and cider houses. But for now, in this timeless haven, you raise a glass of cider and relish every detail— its tannic, earthy notes, the whisper of white Mamula apples and the esteemed company of kindred spirits at the sprawling table before you. This is Northern Spain like you never imagined, and there’s a revelation in every bite.

3 Reasons to Travel with Ryan Bartlow
After culinary school, Ryan moved to San Sebastian, where he cooked for two years at three Michelin-starred Akelarre and lived above a historic, family-run tavern. When he opened Ernesto’s in New York City after Christmas in 2019, he built it as a personal homage to the food, people and spirit of Spanish Basque Country—and named it for fellow expat devotee, Ernest Hemingway. We could not be more excited to experience the rugged romance of this place with him.

Basque in the Glory
Ryan’s years in the Basque Country were foundational to his career and life. At Ernesto’s, he strives to capture the flavors, sensibilities and spirit that color life in this part of Spain. It’s delicious and beautiful, and we can’t imagine what we’ll find there together.
Slow and Steady
Ryan loves the food and wine of Northern Spain, but even more so, he admires the easygoing rhythm of the workday, the way locals pride themselves on enjoying their friends, family and work. Whenever he returns, it’s like going home, and we could not be more ready to experience this place with Ryan setting the pace.
Three's Company
While in Basque, Ryan took a room above a bar along with a few young Spanish cooks. Together, they’d spend their off-hours eating and drinking downstairs—and visiting friends and family around the region and further afield. On this trip, we’ll celebrate these enduring friendships—and develop new ones in turn.
Great guides, innovative programming and attention to detail.
Modern Adventure opened doors that we would not otherwise be able to experience.
Each hotel became more beautiful, each quaint and modern and staffed by the greatest humans ever.
Where We Sleep

Traditional architecture meets contemporary design. Enjoy the understated luxury and sophistication of our boutique Basque Country hotels.
*On rare occasions, our hotels will change. Our standards for luxury and authenticity will not.
The Artist Grand Hotel of Art
BilbaoSituated between the Fine Arts Museum, Iberdrola Tower and Euskalduna Palace, this design-forward hotel is an art lover’s destination unto itself. It’s located just a stone’s throw from almost everything Bilbao is known for, and so close to the Guggenheim that it almost feels like Jeff Koons’s 43-foot-tall puppy is about to charge the lobby. Make like a local and throw back a cocktail on the beautiful rooftop terrace.

Eurostars Los Agustinos
Álava, RiojaLocated in a picturesque village center in the heart of Rioja, the Eurostars Los Agustinos provides a historic home base amid the vineyards of Northern Spain. The 1373 building originally housed nuns as a convent, and has served as a Spanish military barracks, local jail and hospital. Now, its ochre stone walls and central cloister welcome visitors for merry holidays steeped in world-class gastronomy and elegant wines

Hotel Catalonia Donosti
San SebastiánHoused in a restored 17th-century convent, this hotel blends historic grandeur with contemporary style in the heart of San Sebastián. Its imposing stone façade gives way to warm, British-inspired interiors with leather headboards, tartan accents, and rich hardwood floors. A rooftop terrace offers sweeping sea views, while the spa, wellness center, and Basque-driven cuisine complete the experience.
