James Beard Award Semifinalist & Frequent Mexico City Traveler, Jason Dady
You’ve just wandered into the local market, yet somehow, it feels like you’ve stumbled upon a different dimension — one in which color and texture reign supreme. Here, line cooks flash in lightning-fast streaks, while towers of marzipan vie for space with sticky tarugos and mangos the color of the sunshine. This week you’ve met chefs and artisans at the peak of their craft; you’ve contemplated Aztec stone sculptures and wandered the halls of Frida Kahlo’s candy-colored home. Later today, you’ll float alongside mariachi bands in Xochimilco’s ancient canals, but right now, immersed in the electric hum of market life, you feel it deep in your bones: this is Mexico City, exhilarating, intimate, and exquisitely high-definition.

3 Reasons to Travel with Jason Dady
Chef Jason Dady has been a driving force in San Antonio’s culinary scene for over two decades, shaping the city’s food culture with his bold approach to flavor. As the founder of the Jason Dady Restaurant Group, he helms award-winning concepts, from Tuscan-inspired Tre Trattoria to Texas pit ‘cue at Two Bros BBQ Market. A James Beard Award semifinalist, he’s been featured on Iron Chef Gauntlet, Beat Bobby Flay, and Man, Fire, Food. Known for his inventive spirit, Chef Dady continually pushes culinary boundaries while staying rooted in the flavors and traditions that inspire him.

Culinary Revivalist
In San Antonio, Chef Jason Dady has played a role in urban renewal, breathing new life into historic spaces with bold culinary concepts. His deep admiration for Mexico City’s evolving food culture reflects that same energy—where centuries-old markets, contemporary food halls, and street food vendors shape a dynamic culinary landscape rich in tradition and reinvention.
Al Mercado
For Jason, the best meals begin with curiosity. Like in his own kitchens, where menus shift with the seasons, Mexico City’s mercados provide a daily invitation to discover. From the scent of just-ground cacao to the vibrant colors of heirloom corn, each visit shapes what’s on the plate—spontaneous, ingredient-driven, and deeply connected to place.
Explore Your Palate
Jason’s philosophy—“Explore your palate”—has defined his career, inspiring diners to step outside the familiar and embrace something new. In Mexico City, that means diving into the unexpected: a taqueria hidden in a market stall, a single-origin mole crafted over days, or a dish reimagined through centuries of tradition. Food is more than sustenance—it’s an ever-evolving story.
“The amount of culture and history our local guide provided surpassed my expectations. I learned more in four days than I would have with a month on my own.”
I loved how incredibly knowledgeable our local guide was.
Being in a like-minded group of curious travelers pushed me outside my comfort zone to try new foods, explore new perspectives and even fly in a hot-air balloon over the pyramids!
