But in this moment, you’re spellbound by the gentle crackle and sizzle of the open flame grill behind you. 3 Reasons to Travel with Javier Bardauil

Chef Javier Bardauil, a 2022 James Beard Award “Best New Restaurant” finalist, is renowned for bringing authentic South American flavors to Detroit with his first restaurant BARDA. Having trained at the Argentine Gastronomy Institute and Lenôtre School in Paris, Bardauil honed his craft working under Argentina’s culinary icons, Francis Mallmann and Pablo Massey. As co-anchor of the Latin-American TV show Cena y Cine, he shared his passion for flame-kissed cookery. Bardauil’s second restaurant, Puma, opened in 2024, channels the casual, lively spirit of Buenos Aires’ beloved bar-restaurants. We can’t wait for him to join us in November to reveal the secrets of Buenos Aires, Mendoza and Uco Valley with all the love and passion of a native-born son.

Dinner & A Show

Chef Javier is a natural entertainer and each meal is a performance. At BARDA, he creates an immersive dining experience where the kitchen feels like a stage and the team, carefully chosen through “castings,” brings his vision to life. His connection to Argentina’s culinary traditions is evident in every dish, creating a sense of theater and storytelling on every plate.

It’s Fire

Hospitality is more than serving food—it’s creating an atmosphere where people feel connected and inspired. Cooking over an open flame is a multisensory art, blending sight, smell, and taste. Each dish Chef Javier creates reflects the passion and instinct of Argentina’s flame-cooking traditions, turning every meal into an unforgettable memory.

School of Javier

Chef Javier views his restaurants as embassies of Argentinian culture. Cooking over an open flame is an instinctive, artful process—there are no recipes, only the moment. By sharing the soulful, dynamic traditions of his homeland, Bardauil invites guests to experience Argentina’s bold flavors and the mastery behind its fire-driven cuisine.

Day 2: Buenos Aires

November 8, Sat

We’ll continue our exploration of Buenos Aires for a unique street food experience where we trace the origin stories of specific ingredients while rambling through one of the city’s most iconic neighborhoods. We’ll start in San Telmo, the city’s oldest barrio, whose cobbled alleyways make up the heart of tango; continuing to the unforgettable La Boca, lined with its iconic bold and brightly painted buildings. Once there, we’ll listen to street musicians on Caminito Street and indulge in a family-style lunch.

After lunch, we’ll head to the 1908 Colón Theater, South America’s finest to enjoy an insider’s look at the ornate building’s frescos, backstage area, and studios.

After an afternoon of exploring Buenos Aires on your own, we’ll reconvene together for dinner at one of Buenos Aires’ top restaurants where we’ll enjoy a single surprise tasting menu full of haute cuisine with Argentinian soul.

Tastemaker Moment: Javier will share his love for food and Argentina during our street food tour

Day 3: Buenos Aires

November 9, Sun

Today we’ll embark on a tour of a few historic neighborhoods bursting with local color and lore. First, it’s off to the barrio Recoleta for an immersive tour.

Next, we’re off to unforgettable Palermo, lined with its mesmerizing street art and bustling local markets. We’ll sit down for lunch where Javier will roll his sleeves up and cook an authentic Argentine lunch.

The rest of the day is yours to explore and dinner is yours to embellish this evening.

Day 4: Mendoza

November 10, Mon

This morning, we’ll hop on a short flight to Mendoza. Here, we’ll toast our arrival, marvel at the storybook views in every direction, and enjoy seeing the sights of Mercado Central and San Martin Park.

Today we’ll spend our time at a renowned, picturesque family winery. While there we’ll savor a stunning wine-paired lunch with the Andes Mountains hovering behind us.

Dinner is on your own tonight.

Day 5: Mendoza

November 11, Tue

We’ll start the day in exquisite repose—seriously, you’ll have time to relax and stroll the grounds of our breathtaking hotel or even breakfast in bed.

In the afternoon we’ll visit a local vineyard where Javier will cook lunch. From there, we’ll immerse ourselves in the essence of Mendoza’s wine culture—wandering vineyards nurtured by the Andean foothills, savoring Malbecs born from the unique terroir, and tasting elegant blends produced with century-old techniques and small-batch varietals.

We’ll end our day with a vibrant tapas dinner crafted from local ingredients, perfectly paired with wines from the region.

Tastemaker Moment: Javier will make lunch

Day 6: Uco Valley

November 12, Wed

After breakfast, our wine immersion begins anew. Our first stop begins with a refreshing toast of sparkling wines—each bottle derives from hand-picked varietals sourced from the Uco Valley. Every transcendent wine tasting deserves another, so we’ll shuffle over to another heralded estate for a flight of some younger wines and a conversation with the cellarmaster.

Lunch is a special treat; Enjoy panoramic vineyard views while the sun dips behind the Andes at a winery nestled in the heart of the Uco Valley.

Our bellies full, we’ll check into the beautiful Alpasion Lodge and take some time to decompress and relax.

Dinner tonight is yours to embellish.

Day 7: Mendoza

November 13, Thu

Today we tap into our inner gaucho with a full-on Andean adventure climbing up the mountain on horseback! Afterwards, we’ll reconvene for lunch at a local hacienda—far from a simple boxed lunch, this will be a banquet of freshly harvested seasonal ingredients cooked with traditional gaucho methods.

After spending some time relaxing at the hotel, we’ll reconvene for our farewell dinner. We’ll watch in awe as a team of chefs prepare a gaucho-worthy feast of slow-grilled rib eye roasted on an open flame. Wrapped in alpaca blankets, we’ll toast with Javier to this perfect end to our week together.

Tastemaker Moment: Javier will give a toast to the end of our trip together

November 14, Fri

Alas, it’s time for our journey to end. We’ll celebrate our adventure over breakfast, with a last cortado or glass of Malbec, before offering fond farewells and transferring to the Mendoza Airport.
