That’s our goal with Kyle Knall — the chef, owner and creative force behind Milwaukee’s Birch, where no menu will ever be the same (really, never). That’s because Kyle loves pushing himself to riff off the fresh produce at hand.

It’s a talent that has the James Beard Foundation’s attention, leading him to become a recent semifinalist for Outstanding Chef. Join Kyle to eat deliciously fresh seafood, devour meats charred to perfection over wood-fired grills, and cheers the winemakers of the Douro Valley, the chefs and producers of Porto, and all the other talented artisans who we’ll meet on this incredible journey to Portugal.
