James Beard Award Semifinalist and Chef-Partner of Taqueria Chingón, Marcos Ascencio
You’ve just wandered into the local market, yet somehow, it feels like you’ve stumbled upon a different dimension — one in which color and texture reign supreme. Here, line cooks flash in lightning-fast streaks, while towers of marzipan vie for space with sticky tarugos and mangos the color of the sunshine. This week you’ve met chefs and artisans at the peak of their craft; you’ve contemplated Aztec stone sculptures and wandered the halls of Frida Kahlo’s candy-colored home. Later today, you’ll float alongside mariachi bands in Xochimilco’s ancient canals, but right now, immersed in the electric hum of market life, you feel it deep in your bones: this is Mexico City, exhilarating, intimate, and exquisitely high-definition.

3 Reasons to Travel with Marcos Ascencio
Chef Marcos Ascencio brings bold creativity and deep cultural roots to Chicago’s dining scene. A graduate of the Cooking and Hospitality Institute of Chicago, his career spans fine dining at NoMi, culinary mentorship in Pilsen, and co-founding the cult-favorite taqueria Tacos Chingón—praised for its fire-kissed al pastor and chef-driven specials. Now, with the opening of Mariscos San Pedro, he celebrates Mexico’s coastal cuisine with a modern edge, continuing to push boundaries while honoring heritage, seasonality, and Chicago’s rich culinary diversity.
El Chingón
In Mexico, “chingón” is slang for someone who’s the best at what they do. It’s also the namesake of Chef Marcos’s taqueria—a nod to Mexico City’s unapologetic flavor, swagger, and soul. Tacos Chingón is his love letter to the capital’s streets, where tradition and irreverence live side by side.
Always a Party
Chef Marcos sets the tone everywhere he cooks, and at Mariscos San Pedro, that tone is pure joy. Modeled after Mexico’s rowdy seafood bars, it’s a celebration of coastal flavor, cold drinks, and community. Alongside his partners, he’s created a space where great food and great vibes go hand in hand.
Ancient Traditions, Modern Renditions
From trompo-roasted al pastor to an intimate 15-course taco omakase, Chef Marcos channels Mexico City’s cutting-edge culinary scene. He honors street food traditions with reverence, then reimagines them with bold technique and unexpected twists—reminding us that Mexican cuisine is both rooted in history and always evolving.
“The amount of culture and history our local guide provided surpassed my expectations. I learned more in four days than I would have with a month on my own.”
I loved how incredibly knowledgeable our local guide was.
Being in a like-minded group of curious travelers pushed me outside my comfort zone to try new foods, explore new perspectives and even fly in a hot-air balloon over the pyramids!
