Publican Quality Meats Star Butcher and Executive Chef, Rob Levitt
The hills are quiet now, just the soft clang of cowbells in the distance and the rich scent of aging Parmigiano wafting from a stone cellar. Yesterday, you stood in that very room, watching golden wheels turned and brushed by hand at a historic dairy in Zocca, where the slow work of cheese making has outlasted generations. And today, your own hands worked flour into dough and stirred a simmering ragù in a Modenese kitchen. The ingredients came from the market that morning—fresh citrus, ruby-red radicchio, and herbs bundled in brown paper. Later this week, the olive trees of Borgonovo will give you another kind of sensory memory: the fragrance of crushed fruit, the sting of peppery oil on your tongue, the weight of history in every pour. But tonight, it’s about what you’ve created—passing plates, raising glasses, and letting the flavors of Emilia-Romagna speak for themselves. Each dish a thread in a much larger tapestry of land, labor, and legacy.

3 Reasons to Travel with Rob Levitt
A classically trained chef and butcher, Rob Levitt is the Head Butcher and Chef at Chicago’s award-winning Publican Quality Meats. After graduating from the Culinary Institute of America, he cooked in Michelin-starred restaurants and went on to open Chicago’s first sustainable, whole-animal butcher shop, The Butcher & Larder. His work has been featured by Food & Wine, GQ, and The Good Food Awards. Deeply influenced by Italian culinary tradition, Rob bridges Emilia-Romagna’s time-honored methods with the Midwest’s farm-forward ethos, honoring its butchery, preservation, and pasta-making techniques with every cut and plate.

Whole Hog
Rob Levitt made his name championing nose-to-tail butchery long before it was cool. At Publican Quality Meats, he honors every cut, just like in Emilia-Romagna, where nothing is wasted and everything has a purpose. He partners with regenerative farms, teaches whole animal cooking, and proves that reverence and flavor go hand in hand.
Jazz Hands
Before he was a chef, Rob studied jazz. Improvisation, rhythm, precision—they’re part of his culinary DNA. What started behind a music stand as a saxophone player now unfolds behind the butcher block, where instinct and artistry meet tradition. That same soulful energy lives in Emilia-Romagna, where technique and emotion make even the simplest dish sing.
Fun Guy
Equal parts mushroom lover and meat whisperer, Rob is in his element when the leaves start to fall and the truffles start to surface. He’s a natural host—curious, convivial, and always ready to share a bottle or break bread. If you’re lucky, he might even crack a few (mildly bad) fungi puns.
I loved the efficiency, service, quality and personal touch... an amazing time!

For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
