Illustrated map of Sicily featuring Palermo, Catania, Mt. Etna, wine, and pasta-making

Thousands of feet above the world, you breathe in the salty Mediterranean air, mesmerized by the churning surf below. You’re in Sicily, an island kingdom where the culture and cuisine mingle with legacies of Roman, Byzantine, Arab, English and French rule over three millennia. In recent days, you wandered through ancient amphitheaters and markets, fragrant with ripe summer tomatoes and fresh lemon, sampled golden arancini from street vendors and rolled fresh pasta for lunch. On the slopes of Mt Etna, you discerned volcanic minerals in glasses of fine Carricante and Nerello Mascalese, as the winemaker shared the delicate alchemy of her craft. You’ve cooked with a local chef after sourcing fresh ingredients and picniced in the shadow of ancient greek temples. This is the Sicily of legends — where tradition rises daily with the morning sun, lending comfort and beauty to all it touches.

3 Reasons to Travel with Zach Engel

James Beard Award–winning chef Zach Engel is the owner of Michelin-starred Galit in Chicago. His career has taken him from Zahav in Philadelphia and Shaya in New Orleans to kitchens in Tel Aviv and California. In Sicily, Zach brings a cook’s curiosity for the Mediterranean and the generations of cultural exchange that continue to shape how the island eats.

Across the Mediterranean

Zach spent years cooking alongside people from across the Middle East, trading recipes and learning how food carries culture across borders. Sicily offers a fascinating continuation of that story. From Arab-influenced couscous in Trapani to citrus, saffron, and pistachios, he'll trace the ingredients and traditions that traveled across the Mediterranean and became distinctly Sicilian.

A Sense of Place

At Galit, Zach pairs Middle Eastern cooking with the best ingredients from local farmers and producers. In Sicily, that same philosophy takes on new meaning, where volcanic soils, coastal waters, and generations of agricultural knowledge shape what's on the table. Expect a chef's curiosity for the people behind the ingredients and the traditions that make them worth preserving.

Beyond the Familiar

Zach has long championed wines from lesser-known regions, using each bottle to tell a more complete story of its origins. Sicily offers plenty to discover, from mineral-driven Etna wines to indigenous grapes grown across the island. With Zach, we'll look beyond familiar labels to the growers, landscapes, and histories that give Sicilian wine its character.

Day by Day

*On rare occasions, this itinerary may change.

Day 1: Sicily

July 13, Tue

Benvenuti a Sicily! After settling in at our hotel, we’ll meet up with our tastemaker and convene for a delightful welcome dinner. The meal—designed to introduce us to the core flavors of Sicily—is the perfect beginning of a journey filled with culinary delights, cultural discoveries, and moments of pure joy.

Day 2: Agrigento

July 14, Wed

This morning, we’ll head to Agrigento. Alongside an expert guide, we’ll explore this former Greek colony was established in the 6th century BC and was a leading city-state in the Mediterranean world. Agrigento’s magnificent Doric temples dominate the ancient town, much of which still lies intact among acres of olive, pistachio, almond and fruit trees.

For lunch, we’ll ramble down the road for a special picnic. Hidden within the valley, the Kolymbethra Garden is dense with citrus trees, old olive groves and Mediterranean plants, its agricultural landscape sustained in part by ancient underground waterways. Once there, we’ll sit down for a private meal complete with freshly pressed citrus and other local specialties.

After, another side of rural Sicily comes into focus at a goat farm. We’ll meet a shepherd, learn about the work behind the island’s farmhouse cheeses and taste them where they are made. Later, dinner awaits back at the hotel.

Tastemaker Moment: Zach will offer insight into local cheeses and pick wines for our picnic lunch

Day 3: Agrigento & Ragusa

July 15, Thu

Today, we make our way east along Sicily’s southern reaches toward the countryside near Ragusa. At a family-run organic farm, we’ll begin crafting our lunch well before anyone sits at the table. We walk the garden first, gathering seasonal vegetables and aromatic herbs before joining the kitchen to turn what is growing outside into a meal. Alongside the farm’s chef, recipes come through hands and memory with a little flour on the work surface, produce picked at its peak, the logic of cooking according to what the land provides.

After lunch, we’ll continue into Ragusa Ibla, rebuilt in elaborate Sicilian Baroque style after the devastating earthquake of 1693. Stone churches and palazzi climb the hillside, their carved façades catching the changing afternoon light. While there, we’ll step inside the workshop of a Sicilian cart artisan. Once practical transportation, these brightly painted carts became moving canvases crowded with saints, knights and scenes from Sicily’s storytelling culture.

The day ends in the countryside near Ragusa, with dinner at our hotel.

Day 4: Modica & Scicli

July 16, Fri

We’ll take some time to relax at the hotel this morning before making our way to Modica—one of the island’s baroque gems. Once there, we step into the cool interior of an old-world cioccolateria. Here, a chocolate maker guides us through the ancient process shaped by a centuries-old cold-working technique introduced during Spanish rule. Unlike conventional methods, the chocolate is never conched or refined, meaning the sugar crystals remain intact, lending a pleasantly grainy bite. With no added cocoa butter, the result is intensely aromatic, deeply rooted in tradition, and unmistakably Sicilian. After sampling sweet and savory variations, we linger over a relaxed lunch in town.

The rest of the afternoon is ours for wandering before we continue toward Scicli. There, the afternoon moves to the scents growing wild in the surrounding countryside. In a garden of aromatic plants, thyme and sage release their oils between the fingers while mint and citrus lend themselves to cocktails mixed from freshly gathered herbs.

As the light softens, aperitivo becomes dinner outdoors, with the garden supplying both the setting and part of the evening’s flavor.

Tastemaker Moment: Zach will lend a hand during our chocolate-making experience

Day 5: Mount Etna

July 17, Sat

After breakfast we’ll head out to visit majestic Mount Etna, an active volcano that towers almost 11,000 feet over the island — and occasionally glows red with lava! We’ll head to a local estate where heritage vines clamber up the volcano’s slopes to an altitude of over 3,000 feet, producing delicate whites and intense, fruit-forward rosés and reds.

Following our tasting, we’ll sit down for a wine-paired lunch before continuing up the mountain. Venturing up the slopes in a rugged jeep, the landscape shifts from fertile vineyards to lunar rock fields. With a guide leading the way, stops at various view points give way to smoking craters, sweeping views, and the raw power of one of Europe’s most active volcanoes.

Once back at ground level, we make our way to our hotel in Taormina to check in and have dinner on our own.

Day 6: Taormina

July 18, Sun

This morning we’re off to Taormina, pearl of the Mediterranean, to explore on foot starting with its ancient Greek amphitheater, overhanging the crashing surf below. From our perch at arguably the world’s most famous outdoor theater, the views of the bay of Giardini Naxos to the south, and mainland Italy to the north, are spectacular.

The afternoon is left open to spend our final day in Italy how you wish. Perhaps a long lunch, time along Corso Umberto, or a few quiet hours back at the hotel are on the agenda.

Later, our evening brings us to a family-owned villa overlooking the sea, a home passed through generations. In its kitchen, we cook together one last time, preparing Sicilian dishes before carrying them to the table. Wine is poured, plates begin making their way around, and dinner stretches into the evening on the terrace. After nearly a week of farms, kitchens, and shared tables, Sicily gives us a fitting farewell meal.

Day 7: Departures

July 19, Mon

Arrivederci Sicilia! We’re off this morning after nine immersive days of adventure and culinary adventure. After breakfast, we’ll say ciao to each other, knowing the memory of our adventure together will live in our hearts forever! We’ll organize a group transfer to Palermo’s PMO airport for flights to mainland Italy and beyond.

Where We Sleep

Stone plunge tub on a wooden deck overlooking vineyard rows and mountain valleys at Dimora Cottanera in Castiglione di Sicilia, Sicily

Beautifully curated accommodations—we’ll relax under the gaze of a volcano in Sicily, and feel like we’re part of the island's story.

*On rare occasions, our hotels will change. Our standards for luxury and authenticity will not.

Villa Athena Resort

Agrigento

Our first home sits inside the archaeological park of the Valley of the Temples, just 200 meters from the fifth-century BCE Temple of Concordia. The late-18th-century residence looks across ancient olive trees and classical ruins, with a private entrance leading hotel guests directly into the archaeological park. Some rooms bring the temple into view from the window, a remarkable meeting of contemporary Sicily and ancient Akragas.

Torre Don Virgilio Country Hotel

Val di Noto

An old Sicilian farmhouse surrounded by centuries-old olive trees becomes our base in the Val di Noto countryside. Eleven kilometers outside Modica, the property trades city streets for gardens, old stone and the shade surrounding its outdoor pool. Ragusa, Modica and Scicli are within reach, while evenings return us to the quieter rhythms of rural southeastern Sicily.

NH Collection Taormina

Taormina

In the heart of Taormina, our final hotel places the historic center just beyond the door and the Ionian coastline below. The early-20th-century building has been reworked with contemporary interiors, while balconies, panoramic terraces and an infinity pool open toward the sea, the Calabrian coast and Mount Etna. Corso Umberto and Taormina's ancient theater are a short walk away.

These experiences are not suitable for travelers who require physical mobility assistance, personal care support, or significant itinerary modifications in order to participate. In many destinations, accommodations for significant physical limitations may not be possible without materially altering the experience for the individual traveler or the group.
