Thousands of feet above the world, you breathe in the crisp Mediterranean air and gaze at the crashing surf below. You’re in Sicily, ancient island kingdom that’s been ruled by 13 empires, each of which has left its own enduring cultural footprint. You’ve already strolled ancient amphitheaters redolent with flowering orange blossom and bergamot, wandered market stalls and learned the fine art of pasta-making. Now you’re meeting a shepherd to sample cheese produced by his flock grazing just outside, before heading to a centuries-old vineyard on the slopes of a volcano for a flight of reds unlike any you’ve ever tasted. This is the true essence of Italy.
With us on this adventure is powerhouse pastry chef Caroline Schiff, a 2022 Food & Wine Best New Chef, James Beard Award nominee and lover of all things Italian. Caroline is well-known for crafting whimsical, pitch-perfect desserts and breads at buzzy Brooklyn chophouse Gage & Tollner, and in-person she’s relaxed and ready for anything. This will be her third Modern Adventure, following a sold-out Morocco trip in 2023 and a journey through Provence in 2024. In Sicily, we’ll dive into the wonders of spring on Italy’s magical southwestern satellite. Together, we’ll make fresh sheep’s milk ricotta with local shepherds as March lambs frolic in nearby fields. We’ll refresh with tart cups of granita after a wine-soaked lunch, and visit salt-plains and ancient temples — pausing for pastries every chance we get.
