Three Reasons to Travel with Britt & Kinsey

Chefs Britt Rescigno and Kinsey Leodler are the wife-and-wife team behind Fiamma and Communion Bay Supper Club. Britt, a Chopped winner and three-time Tournament of Champions semifinalist, leads the kitchen while Kinsey brings years of hospitality expertise. Together, their travels through Italy inspire Fiamma’s cooking and their shared philosophy that the best meals build community around the table.

Italy is woven into Britt and Kinsey’s marriage and the food they create at Fiamma, but they never return looking only for what they already know. Day 1: Torino

June 4, Fri

Benvenuti a Torino. The best place to begin is right in the heart of it all. Upon arrival, settle into the hotel before we gather for our first evening together in Piedmont’s capital. Our first stop is Circolo dei Lettori, a literary salon housed within a historic palazzo, where frescoed rooms and shelves of books carry on Turin’s long tradition of intellectual life.

Here, surrounded by the city’s writers, readers, and thinkers, we’ll take our seats for a welcome dinner. It’s a fitting introduction to a region that takes its pleasures seriously: conversation given time to unfold, good food at the center of the table, and nowhere else we need to be.

Day 2: Torino

June 5, Sat

This morning, sunlight filters through colonnades and tiled roofs and Porta Palazzo is already humming when we arrive. In Europe’s largest open-air market, the air is thick with the scent of ripe stone fruit, aged cheeses, and just-baked focaccia. Farmers arrange seasonal produce beneath market awnings while shoppers, ourselves included, move between stalls.

From here, we’ll walk through the historic center, pausing at a beloved pasticceria for gelato and piccola pasticceria torinese, the bite-sized pastries that have long accompanied the city’s café culture.  After, you’ll have time to explore and have lunch independently.

As evening falls, the kitchen fills with warmth and laughter for an intimate cooking class: pasta is rolled, sauces simmer, and the day’s market finds are transformed into a shared feast in an edible love letter to Piedmont.

Day 3: Langhe & Pollenzo

June 6, Sun

Today, we venture to the outskirts of the city where vineyards share the hills with farms and pasture and find ourselves learning the art of soft cheese with a master cheesemaker. We’ll work our way through mozzarella and burrata, tasting as we go, of course. Lunch follows with local specialties and sheep’s cheese made right here.

Since brilliant cheese requires brilliant wine, we’ll continue onto a family estate just down the road. We’ll trace another expression of Piedmont’s agricultural traditions through the cellar and into our glasses. Dolcetto and Freisa lead to Barolo, the Nebbiolo-based wine inseparable from these hills.

By late afternoon, we arrive in Pollenzo and settle into our countryside hotel. Tonight’s dinner is deliberately light. Tomorrow, there is more Piedmont to taste.

Day 4: Pollenzo & Alba

June 7, Mon

This morning belongs to Alba, the medieval hamlet and undisputed capital of truffles and hazelnuts. Ferrero even has its headquarters in the heart of downtown. With a local guide leading the way, we’ll stroll the pedestrian zone and take in the rich splendor of the architecture, not to mention the thriving art scene. Then we have time to wander on our own, following narrow streets toward whatever café, enoteca, or lunch table catches our attention.

Later, we return to wine country for a visit to a family estate rooted in the hills of Monferrato. Once there, we’ll learn how their vineyards and cellar translate the character of this corner of Piedmont into the bottle, then taste a selection of the estate’s wines.

Back at the hotel, there’s time to rest before we gather again over dinner at a local restaurant.

Day 5: Langhe & Around

June 8, Tue

After breakfast this morning, we find ourselves wandering the rows of a majestic, organic hazelnut grove. Here, we’ll sample all kinds of local favorites, witness their handed-down harvest techniques, and learn how to elevate these nuts with just the right type of chocolate.

Then we follow another Piedmontese ingredient underground and hunt for truffles! Led by an expert trifolau, we’ll retreat to the forest with specially trained dogs for a guided experience on locating, identifying, and cooking up these flavorful fungi. Walking the forests of Langhe is pure magic as we listen for a few secrets and tricks of this ancient tradition.

Hunting for truffles is hard work, but don’t worry, a sumptuous award is in store. Afterwards, we’re welcomed into the hunter’s home for a family-style lunch scented with the day’s finds.

As the late light of the afternoon slips into the valley and make our way to Pollenzo and the University of Gastronomic Sciences. Here, in the place where Slow Food began, we’ll consider the biodiversity, agricultural traditions, and producers behind what we’ve been eating all week. We’ll take a tour of its historic campus and then descend into their coveted Wine bank, which features more than 100,000 bottles of Italy’s rarest and most celebrated wines.

Day 6: Langhe & Around

June 9, Wed

Nebbiolo has spent centuries learning these hills. Today, we follow it into the vineyards and cellars of two local estates, walking their cellars and tasting wines shaped by their particular patch of Langhe soil. By lunchtime, we’re ready for a proper trattoria meal. At a beloved local haunt in La Morra known for its intimate setting and expansive wine list, where even the bread feels reverent, we’ll enjoy regional cooking passed around the table, wine poured alongside it, and no reason to hurry.

Tonight, we gather one last time for a farewell dinner that speaks to the soul of Piedmont. It’s a meal worthy of reflection on wines tasted, friendships formed, and the unforgettable rhythm of this region’s kitchens and hills. We’ll sit down together and toast to an incredible week of discovery and exhilaration.

Day 7: Torino Departures

June 10, Thu

Arrivederci! All beautiful things must end, and so we go our separate ways. After a leisurely breakfast, we’ll transfer to the airport to catch our flights onward and home. Until next time: Ciao!

  1. What does the price include?

    Six nights at boutique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; departure airport transfer; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare to and from Italy; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

  3. Where does the trip start and end?

    Our adventure begins and ends in Torino, Italy. The closest airport is the Torino International Airport (TRN). We recommend arriving one day early to ensure you’re at our starting point on time.

    Detailed arrival and departure guidance is provided in your post-purchase trip materials, including recommended routes, transfer options, and timing considerations. If you have specific questions before booking, our team is always happy to help.

  4. What travel documents are needed?

    US citizens are not required to have a visa to enter Italy for stays up to 90 days. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Italy.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers, there is a $900 single-supplement fee—paid at the time of booking to secure a private room.  These spots are extremely limited and available on a first come, first serve basis.

  6. Who is going on this trip?

    This trip will have no more than 16 guests, plus our Modern Adventure team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading the trip?

    This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. What is the cancellation policy?

    We understand plans can change. Here’s how cancellation fees are incurred depending on when you let us know:

    • More than 150 days before departure: $1,500 per person deposit
    • 150–121 days before departure: 50% of the total trip price
    • 120 days or less before departure: 100% of the total trip price

  9. Do I need Travel Insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

  10. When will my final balance be due?

    Your payment schedule depends on how far in advance you book your trip:

    • At the time of booking: Pay your $1,500 deposit per person.
    • 180 days before departure: 50% of your trip cost is due.
    • 120 days before departure: Full balance is due.

    We’ll send you secure payment links and reminders before each due date to make the process easy. If you book within 120 days of your trip, the remaining balance is due within 10 days.

  11. Is this trip the right fit for me?

    Modern Adventure trips are active, immersive small-group experiences. Our itineraries often involve sustained walking and standing throughout the day, including stairs, uneven terrain, cobblestones, unpaved paths, and moving between experiences at a pace that keeps the day flowing for the group.

    These experiences are not suitable for travelers who require physical mobility assistance, personal care support, or significant itinerary modifications in order to participate. In many destinations, accommodations for significant physical limitations may not be possible without materially altering the experience for the individual traveler or the group.

    All travelers are responsible for informing Modern Adventure of any physical limitations, medical considerations, or concerns before booking, or as early as possible before departure. Please don’t hesitate to contact us before booking if you have any questions. We want every traveler to feel confident, comfortable, and fully prepared for the journey ahead.
