New Zealand-born Executive Chef and Restaurant Owner, Elliot Bell
You’re half a world away and the wine is flowing. Endless, sun-filled skies cast a golden glow over rows of vines and rugged New Zealand peaks. Here, life is an unhurried symphony of honoring the land and sharing storied traditions, a tapestry of breezy olive groves and terraced vineyards tucked against the sea. Yesterday, you explored the regions bounty at the local market, tasting seasonal produce and choosing ingredients for an afternoon cooking class. Today, you’ll soar over the vast wilderness of Fiordland National Park in a private helicopter, the landscape stretching out in dramatic beauty below—sheer cliffs carved by ancient glaciers, waterfalls tumbling into the dark waters, and the echo of untouched nature all around. Tomorrow, you’ll take a deep dive into landscapes on foot with a leisurely hike and lakeside barbecue. This is New Zealand in full force, and you won’t forget a moment.

3 Reasons to Travel with Elliot Bell
Chef Elliot Bell is the New Zealand born chef and owner of Charlie’s in Napa Valley and a proud St. Helena firefighter. Calling on his decade in the kitchen at Yountville's storied French Laundry, he pairs precision with creativity to build playful dishes using produce from his wine-country neighbors and friends. On this journey with him, we’ll explore cooking shaped by coastal landscapes and community-driven food culture as they continue to guide his approach to seasonality, hospitality, and gathering at the table.

Where it Began
Elliot’s earliest memories are from New Zealand. Though his career has taken him far, that foundation remains intact. Returning now is less about revisiting and more about sharing a place that continues to inform how he cooks and sees the world.
Small Country, Deep Traditions
New Zealand’s cuisine carries layers that aren’t always visible at first glance. Elliot draws from Māori cooking traditions—like slow, earth-cooked meats—as well as the broader influences that shape the country’s table. Traveling with him reveals a food culture that feels both rooted and evolving, defined as much by landscape as by people.
Cooking for Community
At Charlie’s, Elliot cooks for neighbors. For people he knows, producers he works with, and a community he’s part of. That same ethos carries into this journey. Meals are built around local ingredients and shared experiences, where connection matters as much as technique, and hospitality feels natural rather than performed.
Unique experiences, well-organized, outstanding leadership and service.
Unique access to people and places. This was a trip we could not have done without Modern Adventure.
