Chef Sara Bradley is a two-time Top Chef finalist, cattle farmer, and all-around outstanding human. Raised on strawberry fields and pit BBQ, she went on to develop her skills under Michelin-starred chefs in Chicago and New York before returning to her old Kentucky home to open her beloved Freight House tavern. She sources local ingredients within a day’s drive and works to define the “New South” through thoughtful, seasonal cooking. Sara is the perfect companion for the diversity of Morocco's landscape and culture. Sara raises cattle with her husband and she’s an avid gardener, having always been drawn to the ingredients that tell a region’s story. As a farmer, forager, and chef, she’ll help make each meal a celebration of the land and the people who cultivate it. In Morocco, she’ll share agricultural insight as we survey a saffron farm high in the Atlas Mountains, and delight in the botanical wonders waiting in a gorgeous garden sanctuary in Marrakech.

Sara’s family tree blends old Appalachia with Ashkenazi and Sephardic ancestry. This heritage gives her a unique lens into the way food connects cultures across generations. During our time with her in Morocco, we’ll explore the ways culinary traditions have intertwined for centuries and how Jewish culture moved from the Middle East through North Africa, Europe and beyond, proving that food is a story of migration, adaptation, and shared history.

Day 1: Marrakech

May 11, Tue

Salam alaikum! Welcome to Marrakech, a city that rises from the desert and sits at the crossroads of Europe and Africa. Marrakech has a romance all its own, and rich culinary traditions to thrill every palate. After settling into our accommodations, we’ll meet our tastemaker and our fellow adventurists before making our way to an unforgettable welcome dinner.

Dinner is served high above Marrakech, where the city’s rooftops glow amber in the fading light and the sounds of the medina rise from below. It’s a fitting first introduction to Morocco: generous hospitality and local ingredients at their seasonal best. The conversation begins, as does a journey shaped by generous hosts, vibrant flavors, and meals meant to be shared.

Day 2: Marrakech

May 12, Wed

Morning begins with breakfast at our riad before stepping into Marrakech’s medina. With a local culinary guide leading the way, we’ll wander narrow lanes where pyramids of saffron, cumin, ras el hanout, and paprika perfume the air, bakers slide rounds of khobz into communal ovens, and market stalls overflow with preserved lemons, glossy olives, dried figs, almonds, and fresh herbs destined for family tables. Along the way, we’ll come to understand how these ingredients shape Morocco’s culinary identity, each carrying its own history of trade, seasonality, and tradition.

The day continues at the Moroccan Culinary Arts Museum, where a local dada—one of the women entrusted with preserving generations of home cooking—welcomes us into the kitchen. Together, we’ll prepare classic Moroccan dishes while learning the techniques behind carefully layered spice blends, slow-cooked tagines, and time-honored family recipes. Then comes the best part: gathering around the table to share the meal we’ve created together for lunch

The afternoon is left intentionally open, whether that means lingering over mint tea in a quiet courtyard, browsing the souks once more, or simply exploring Marrakech at your own pace. Dinner tonight is on your own.

Day 3: Marrakech

May 13, Thu

We’ll soak in the morning light at the enchanting Majorelle Gardens today. They’re a dreamy sanctuary filled with exotic botanical specimens from the far corners of the world and a labyrinth of crisscrossing alleyways and vibrantly painted buildings. Right around the corner, we’ll get our fill of fashion, Islamic art, and Berber culture at the Yves Saint Laurent Museum, which boasts over 5000 works in their permanent collection.

Next, we’ll step inside Marrakech’s artisan quarter for a rare look at workshops where potters, woodworkers, leather artisans, metalworkers, weavers, and embroiderers continue centuries-old traditions, each piece shaped by practiced hands and generations of inherited knowledge.

Lunch is on your own before we regroup in the bustling Jemaa el-Fna square, where we’ll indulge in fresh and dried fruits, nuts, and spices. 

As the evening sky turns harissa red, our day continues with a lesson in Moroccan mixology and culminates with a rooftop dinner.

Day 4: High Atlas Mountains

May 14, Fri

We leave the energy of Marrakech this morning and make our way east to the High Atlas Mountains, where rugged landscapes and panoramic views await.

Once we’ve arrived, we’ll dive right into the world of saffron: a local farmer will teach us how the world’s most precious spice is cultivated against the backdrop of the majestic mountains. Our visit to this farm will culminate in a saffron-infused lunch.

From here, we’ll spend time soaking in the tranquility of our kasbah. As evening descends, we’ll regroup for a dinner with a menu inspired by local ingredients, allowing us to embrace the Berber tradition of simplicity and warmth.

Day 5: High Atlas Mountains

May 15, Sat

After breakfast at the kasbah, travel into the Amizmiz Valley, a region where Berber communities continue to shape daily life around the rhythms of the land. At an organic farm nestled among orchards, vegetable gardens, and ancient olive groves, we’ll discover how Morocco’s most enduring dishes begin with ingredients harvested just steps from the kitchen.

Working alongside local cooks, lunch today is a hands-on experience teaching the art of crafting a traditional Berber tagine. As the tagine simmers slowly over the fire, we’ll head out with a guide for a gentle walk through the surrounding countryside. Forest paths, a winding river, and expansive views across the valley offer a glimpse of a landscape that has sustained generations.

After, we return to enjoy the lunch we crafted together. And, because no Berber meal is complete without it, we’ll end with sweet mint tea that seems to fly into our gorgeous Moroccan tea glasses.

With our bellies full, we’ll head back to the kasbah. From here, the rest of the evening is yours to elaborate, perhaps soaking in the tranquility of our kasbah or adventuring through the nearby mountain trails. As evening descends, dinner will be available at leisure.

Day 6: Casablanca

May 16, Sun

After a final relaxing morning in the High Atlas Mountains, we journey toward Morocco’s Atlantic coast. The changing landscape offers its own story, carrying us to the energy of Casablanca, the country’s cosmopolitan gateway where French Art Deco architecture, grand boulevards, and oceanfront promenades reflect a different chapter of Morocco’s history.

En route, we’ll pause at Ferme de Bouskoura, a peaceful countryside estate, for a leisurely lunch celebrating the farm’s seasonal harvest prepared by a local chef. 

Afterward, we continue on to the storied Royal Mansour Casablanca, an Art Deco landmark restored to reflect the elegance that defined the city’s golden age. As the day begins to cool, we’ll stroll along the Corniche, where locals gather beside the Atlantic and waves roll steadily onto the shoreline. 

Our first evening in Casablanca concludes at Le Cabestan, a beloved institution perched above the sea, where timeless hospitality and thoughtfully prepared cuisine are matched only by sweeping views of the Atlantic stretching beyond the table.

Day 7: Casablanca

May 17, Mon

After rousing ourselves with a Moroccan mint tea or cardamom-scented coffee, the fabled Casablanca awaits. First, we’ll head to the Hassan II Mosque, the seventh-largest mosque in the world. Erected at what seems like the world’s end, it balances on the ocean’s edge, blending the tradition of handcrafted marble with a retractable roof—a modern wonder steeped in ancient building methods. It’s also the only mosque in Casablanca open to visitors of all denominations.

We continue the day by going deeper into the city with a local guide, visiting many of its defining landmarks, from the stately Royal Palace and the grand arcades of Mohammed V Square to neighborhoods where elegant Art Deco façades stand alongside contemporary cafés and bustling streets. Together, they tell the story of a city shaped by centuries of influence while remaining unmistakably Moroccan.

The rest of the afternoon is yours to enjoy at your own pace. Perhaps retreat to the soothing rituals of a traditional hammam, browse independent boutiques for finely crafted textiles and ceramics, or simply linger over coffee as Morocco’s largest city unfolds around you.

This evening, our farewell celebration takes place in a beautifully restored 17th-century bastion tucked beside the old medina. Beneath swaying palms and within peaceful Andalusian gardens, we’ll celebrate our journey over classic Moroccan dishes accompanied by live music. It’s a fitting final evening shaped by history, hospitality, and the conversations that always seem to linger longest around the table.

Day 8: Departures

May 18, Tue

Alas, our time together has come to an end, but our hearts and bellies are brimming with Morocco. We’ll bid farewell to  our fellow Modern Adventurists and transfer to the airport.

  1. What does the price include?

    Seven nights at unique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access, tastings and hands-on cooking experiences; guided activities, adventures and expeditions; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare; travel insurance; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

  3. What are the arrival & departure details

    Our adventure begins in Marrakech, Morocco, which is roughly a 10-minute drive from the Marrakesh Menara Airport (RAK). Our trip ends in Casablanca, Morocco. The closest airports are Mohammed V International Airport (CMN), about a 30-minute drive from our hotel, and Rabat-Salé Airport (RBA), about a 90-minute drive from our hotel.

    Detailed arrival and departure guidance is provided in your post-purchase trip materials, including recommended routes, transfer options, and timing considerations. If you have specific questions before booking, our team is always happy to help.

  4. What travel documents are needed?

    US citizens are not required to have a visa for tourist visits to Morocco less than 90 days, but are required to show a valid US passport. To enter Morocco, your passport must have at least six months of validity at the time of entry. For citizens of other countries, please check with the Moroccan Embassy or Consulate for information and requirements.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers there is a $2,200 single-supplement fee, paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.

  6. Who is going on this trip?

    Our adventures typically have between 10 and 20 guests, and our Modern Adventure Team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading this trip?

    This trip is led by an expert Modern Adventure Trip Leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. Do I need travel insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

  9. What is the cancelation policy?

    We understand plans can change. Here’s how cancellation fees are incurred depending on when you let us know:

    • More than 150 days before departure: $1,500 per person deposit
    • 150–121 days before departure: 50% of the total trip price
    • 120 days or less before departure: 100% of the total trip price

  10. When will my final balance be due?

    Your payment schedule depends on how far in advance you book your trip:

    • At the time of booking: Pay your $1,500 deposit per person.
    • 180 days before departure: 50% of your trip cost is due.
    • 120 days before departure: Full balance is due.

    We’ll send you secure payment links and reminders before each due date to make the process easy. If you book within 120 days of your trip, the remaining balance is due within 10 days.

  11. Is this trip the right fit for me?

    Modern Adventure trips are active, immersive small-group experiences. Our itineraries often involve sustained walking and standing throughout the day, including stairs, uneven terrain, cobblestones, unpaved paths, and moving between experiences at a pace that keeps the day flowing for the group.

    These experiences are not suitable for travelers who require physical mobility assistance, personal care support, or significant itinerary modifications in order to participate. In many destinations, accommodations for significant physical limitations may not be possible without materially altering the experience for the individual traveler or the group.

    All travelers are responsible for informing Modern Adventure of any physical limitations, medical considerations, or concerns before booking, or as early as possible before departure.
