James Beard Award-Winning Chef, Jen Jasinski
Midday in the Atlas Mountains, the lid lifts from your tagine and a cloud of harissa-laced steam escapes into the dry air. Its scent conjures memories of your first days in Marrakech in the sun-drenched palette of Majorelle’s gardens and the tangle of the medina, alive with color, movement, and the clink of mint tea glasses. Ahead, the modernity of Casablanca and evenings wrapped in warmth, ceremony, and flavor await. Morocco unfolds in layers that are aromatic, ancient, and unmistakably alive.

3 Reasons to Travel with Jen Jasinski
Jen Jasinski is a James Beard Award–winning chef whose thoughtful, globally inspired cooking has helped define Denver's dining scene. Deeply influenced by the flavors of the Mediterranean and North Africa, Jen brings a longtime appreciation for Morocco's vibrant spice traditions, generous hospitality, and market-driven cuisine, offering a perspective rooted in curiosity, craftsmanship, and cultural connection.

Across the Strait
Jen has long been drawn to the flavors of southern Spain, where Moroccan influence lingers in spice cabinets, markets, and centuries-old recipes. Experiencing Morocco offers the chance to trace those connections to their source, discovering the ingredients, techniques, and traditions that continue to shape Mediterranean cooking on both sides of the Strait of Gibraltar.
The Souk Effect
For Jen, markets are where a destination begins to reveal itself. The souks of Morocco offer a feast of color, aroma, and craftsmanship with pyramids of spices, preserved lemons, handwoven baskets, and generations of culinary knowledge exchanged one conversation at a time. It's the kind of place that sparks ideas long after the journey ends.
The Joy of Discovery
Even after decades in the kitchen, Jen believes the best way to grow is to remain a student. Morocco represents exactly that: a new landscape of flavors, techniques, and perspectives waiting to be understood. Rather than arriving with all the answers, she'll explore alongside the group by asking questions, making connections, and finding inspiration together.
So many great experiences I'll take with me forever. All the accommodations were absolutely beautiful.
Making bread with the family in the Atlas Mountains was unforgettable. I loved it!
Beautiful lodgings, epic day excursions to hidden cultural gems, great travel companions and wonderful accommodations.
Where We Sleep
Serene riads, boutique hotels, and distinctly Mediterranean opulence, our Moroccan accommodations are meant to spoil, heal, and comfort*
*On rare occasions, our hotels will change. Our standards for luxury and authenticity will not.
Le Farnatchi
MarrakechTucked within the winding lanes of Marrakech's medina, Le Farnatchi feels more like a private home than a hotel. Just ten individually designed suites surround tranquil courtyards scented with orange blossom, while a rooftop terrace, intimate spa, and acclaimed restaurant offer welcome respite after a day in the souks. It's the kind of place where the city's energy slips quietly away the moment you step inside.
Kasbah Bab Ourika
High Atlas MountainsPerched above the Ourika Valley, this accommodation offers sweeping views of the Atlas Mountains and a serene retreat into nature. Thoughtfully designed rooms, tranquil gardens, and an air of quiet luxury create a restorative stay. Its proximity to Marrakech and Berber villages allows for both deep cultural immersion and peaceful seclusion.
Royal Mansour Casablanca
CasablancaA landmark reborn, Royal Mansour Casablanca brings the glamour of the city's Art Deco golden age into the present. Rising above Casablanca's historic center, its elegant rooms, refined restaurants, panoramic spa, and sweeping Atlantic views offer a sophisticated retreat just moments from the medina, the Corniche, and the city's vibrant boulevards.

Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

- 120 days or less before departure: 100% of the total trip price
For the full details, please see our terms and conditions.
-
When will my final balance be due?
Your payment schedule depends on how far in advance you book your trip:
- At the time of booking: Pay your $1,500 deposit per person.
- 180 days before departure: 50% of your trip cost is due.
- 120 days before departure: Full balance is due.
We’ll send you secure payment links and reminders before each due date to make the process easy. If you book within 120 days of your trip, the remaining balance is due within 10 days.
-
Is this trip the right fit for me?
Modern Adventure trips are active, immersive small-group experiences. Our itineraries often involve sustained walking and standing throughout the day, including stairs, uneven terrain, cobblestones, unpaved paths, and moving between experiences at a pace that keeps the day flowing for the group.
These experiences are not suitable for travelers who require physical mobility assistance, personal care support, or significant itinerary modifications in order to participate. In many destinations, accommodations for significant physical limitations may not be possible without materially altering the experience for the individual traveler or the group.
All travelers are responsible for informing Modern Adventure of any physical limitations, medical considerations, or concerns before booking, or as early as possible before departure. Please don’t hesitate to contact us before booking if you have any questions. We want every traveler to feel confident, comfortable, and fully prepared for the journey ahead.
