Now, those ingredients have been transformed and served for lunch at a table full of laughter and clinking glasses. Yesterday, you traced the centuries-old path of Parmigiano-Reggiano, from the rich milk of Bianca Modenese cows to fragrant wheels aging beneath cool stone vaults. In a few days, you’ll arrive in Borgonovo, where millstones turn slowly and the scent of crushed olives hangs heavy in the air as you taste oils that tingle with pepper. Day 1: Bologna

April 29, Thu

Benvenuto in Italia! We begin our culinary tour in Bologna, the culinary heart of Italy. After settling in at the hotel, we set off on a brief walking tour to get our bearings in this historic city. The red porticoes glow in the late afternoon light, and every corner hums with conversation and the scent of espresso and baked sfogliatelle. Alongside a local guide, we wind through medieval alleyways, past Gothic towers and hidden courtyards, gathering a first impression of the city’s distinct rhythm.

Back at the hotel, there’s time to refresh before we gather again for our welcome dinner at a beloved local trattoria. Whether it’s the silky tortellini in brodo or a perfectly caramelized crescentina, the Emilian table offers a warm, generous introduction to the region’s rich culinary tradition.

Day 2: Modena & Around

April 30, Fri

We start the day in Modena, a city where fast cars, opera, and deeply rooted culinary heritage converge. First stop: the bustling Albinelli Market, where butchers call out orders and produce stalls overflow with fragrant herbs, purple artichokes, and bright citrus. Here, we’ll shop for the day’s ingredients alongside our cooking host. Back in the kitchen, the city’s flavors come alive through our own hands—perhaps with passatelli, hand-rolled gnocchi, or a rich ragù simmered to perfection. Our lunch is the fruits of our labor, shared with good wine and great company.

In the afternoon, we stop at a historic balsamic vinegar factory, where five generations of vinegar-makers have tended wooden casks of aging balsamico in hushed attic rooms. The scent here is syrupy, oaky, and faintly spiced—balsamic that has seen decades pass.

After tastings that awaken the palate, we return to Bologna for time to relax and enjoy dinner independently.

Day 3: Bologna & Around

May 1, Sat

This morning, we head toward the hills of Zocca, where the air is cooler and the land is stitched with chestnut trees and quiet pasture. At a historic mountain dairy, we learn the centuries-old craft of Parmigiano-Reggiano production. The stars here are the Bianca Modenese cows, whose rich milk is transformed into fragrant wheels of cheese.

After sampling fresh and aged varieties, we join a local tartufai for a truffle hunt in the forested hills. The hush of the woods, the earthy scent of damp leaves, the sudden excitement of discovery—it’s a ritual unchanged for generations. Once we’ve had our fill of uncovering an afternoon’s worth of truffles, we’ll return to Bologna for a well-earned Michelin-starred dinner.

Day 4: Bologna & Liguria

May 2, Sun

Today, we trace a path from the hillsides of Modena to the sunlit coast of Liguria. Our morning begins inside the world of Parmigiano Reggiano, where we continue our exploration of cheesemaking and taste varying maturations along the way and sitting down for a light lunch.

After, we continue west to a local winery, nestled among terraced vineyards above the Ligurian Sea. Here, we’re introduced to their innovative underwater wine-aging technique, which involves submerging bottles in the sea for months. The result: textured, mineral-rich wines best appreciated over a coastal lunch overlooking the water.

We arrive in Chiavari by late afternoon, check into our hotel, and have time to unwind before dinner at a nearby restaurant that captures the spirit of Ligurian cuisine—bright, herbal, and kissed with olive oil and salt air.

Day 5: Liguria

May 3, Mon

This morning, we delve into Liguria’s artisanal heritage. At a local woodworking atelier, we meet a craftsman preserving ancient techniques by carving boat parts, rolling pins, and boards from fragrant regional woods. The scent of sawdust and varnish fills the air as we observe the delicate balance of tradition and precision.

Next, we stop at a beloved local bakery in Camogli, to learn the art of Focaccia di Recco. There’s nothing quite like its warm, delicate layers cradling melted cheese with a hint of sea salt. Afterward, there’s time to wander the harbor at your own pace, past shuttered storefronts, fishermen mending nets along the marina, and piazzas where espresso cups clink well into the afternoon. Then, lunch gathers us back together over the flavors of the Ligurian Sea.

Later, after settling into Chiavari and a quiet pause at the hotel, the evening opens inside the home of a local family for dinner. Here, pesto del Tigullio is prepared the traditional way: basil crushed slowly by mortar and pestle, pine nuts and Parmigiano folded in by hand, stories shared across the kitchen table as dinner begins to take shape.

Day 6: Liguria & Around

Start the morning by heading inland to Borgonovo, where we meet a small olive oil cooperative preserving centuries-old traditions. Here, the millstones grind slowly and the air is thick with the aroma of crushed fruit. After tasting grassy, peppery oils, we move to a nearby hazelnut grove where the shade is dappled and the harvest is humble but prized.

Lunch and the rest of the afternoon are yours to embellish before we reconvene for an evening together. Our final dinner is a full-circle celebration at a slow-food trattoria, where Liguria’s land and sea come together in exquisite form. We raise a glass and settle in for a meal that lingers into the evening, rich in stories and local pride.

  1. What does the price include?

    Six nights at boutique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; departure airport transfer; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare to and from Italy; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

  3. Where does the trip start and end?

    Our adventure begins in Bologna. The closest airport is the Bologna Airport (BLQ) for arrivals. The trip ends in Chiavari. The closest airport is Genova Airport (GOA). We recommend arriving one day early to ensure you’re at our starting point on time.

  4. What travel documents are needed?

    Starting in the last quarter of 2026, new ETAIS travel visas will be necessary for US citizens traveling to Italy. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Italy.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers, there is a $1,500 single-supplement fee—paid at the time of booking to secure a private room.  These spots are extremely limited and available on a first come, first serve basis.

  6. Who is going on this trip?

    This trip will have no more than 16 guests, plus our Modern Adventure team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading the trip?

    This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. What is the cancellation policy?

    We understand plans can change. Here’s how cancellation fees are incurred depending on when you let us know:

    • More than 150 days before departure: $1,500 per person deposit
    • 150–121 days before departure: 50% of the total trip price
    • 120 days or less before departure: 100% of the total trip price

  9. Do I need Travel Insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

  10. When will my final balance be due?

    Your payment schedule depends on how far in advance you book your trip:

    • At the time of booking: Pay your $1,500 deposit per person.
    • 180 days before departure: 50% of your trip cost is due.
    • 120 days before departure: Full balance is due.

    We’ll send you secure payment links and reminders before each due date to make the process easy. If you book within 120 days of your trip, the remaining balance is due within 10 days.

  11. Is this trip the right fit for me?

    Modern Adventure trips are active, immersive small-group experiences. Our itineraries often involve sustained walking and standing throughout the day, including stairs, uneven terrain, cobblestones, unpaved paths, and moving between experiences at a pace that keeps the day flowing for the group.

    These experiences are not suitable for travelers who require physical mobility assistance, personal care support, or significant itinerary modifications in order to participate. In many destinations, accommodations for significant physical limitations may not be possible without materially altering the experience for the individual traveler or the group.

    All travelers are responsible for informing Modern Adventure of any physical limitations, medical considerations, or concerns before booking, or as early as possible before departure. Please don’t hesitate to contact us before booking if you have any questions. We want every traveler to feel confident, comfortable, and fully prepared for the journey ahead.
