Giorgio Rapicavoli is an acclaimed Miami chef and owner of Eating House, Luca Osteria, and Mayfair Grill. A champion of Miami’s culinary scene, Rapicavoli infuses his Piedmontese heritage into his innovative creations. At just 21, he became executive chef at Chispa Doral and later earned widespread acclaim with the opening of Eating House, first as a pop-up and then as a standalone restaurant in 2012. Rapicavoli’s work has earned critical praise, cementing his place as a leader in culinary culture. Though he’ll be the first to tell you he’s not cooking for awards, he’s no stranger to the winners circle including accolades such as winning Food Network’s “Chopped”, Forbes “30 Under 30”, Slow Food USA’s “Snail of Approval” for sustainability, and two James Beard Award nominations to name a few.

A Passion for Pasta
Some of Girogio’s most cherished meals growing up were pasta dishes made by his mother. Even as a single mom, she always managed to cook delicious food like pasta pomodoro—which is a very simple dish of basil, tomato, garlic, olive oil, and salt. Today he uses his mother’s recipes as inspiration in his restaurants, such as her carbonara, but with a bit of innovation in the addition of truffle—one of Piedmont’s most famous flavors.
Giorgio was a delight, so warm and open. Traveling with him in his native Piedmont was such a privilege.
I was blown away by how flawlessly Modern Adventure fulfilled and exceeded my expectations.

What does the price include?
Six nights at boutique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; departure airport transfer; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

What does the price not include?
International roundtrip airfare to and from Italy; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

Where does the trip start and end?
Our adventure begins and ends in Torino, Italy. The closest airport is the Torino International Airport (TRN). We recommend arriving one day early to ensure you’re at our starting point on time.

What travel documents are needed?
US citizens are not required to have a visa to enter Italy for stays up to 90 days. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Italy.

Do I need to pay a solo traveler supplement?
For solo travelers, there is a $2,000 single-supplement fee—paid at the time of booking to secure a private room. These spots are extremely limited and available on a first come, first serve basis.

Who is going on this trip?
This trip will have no more than 16 guests, plus our Modern Adventure team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

Who is leading the trip?
This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

What is the cancellation policy?
For group departures booked on or after January 1, 2025, you may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee.
For group departures booked before January 1, 2025, you may cancel more than 90 days before departure and receive a full refund minus a $500 per person service fee. If you cancel on or after 90 days in advance, there is a 50% cancellation fee. On or after 45 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.

Do I need Travel Insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
