The air is thick with rich aromas—chilies, chocolate, and nuts harmonizing on the metate, weaving a luxurious mole that speaks to centuries of craft and tradition. Yesterday, you strolled through agave fields as a fourth-generation mezcalero shared the secrets of Mexico’s iconic spirit. Tomorrow promises lessons in ancient techniques from ceramic artisans and spiritual shamans alike. But, for now, as you savor the first spoonful of mole, it’s a communal feast that mirrors the spirit of Oaxaca—vibrant, rooted in community, and an exquisite ode to both the present and the past.
Joining us on this modern adventure is Caroline Glover, a Food & Wine Best Chef and 2022 James Beard winner whose restaurant, Annette, has shown up on Denver’s Top 25 list for five consecutive years. Her scratch-to-table philosophy—where every ingredient comes straight from the source—is the perfect approach to visiting a community-focused place like Oaxaca. This is Caroline’s 2nd Modern Adventure, and we’re so excited to travel with her again.
No matter how much you may know about Oaxacan culture and food, this journey will teach us, delight us—and leave us hungry for more. Wander colorful markets, taste incredible street food from moles to tlayudas, then wash it all down with the finest artisanal mezcals. This is Mexico like you’ve never imagined.

3 Reasons to Travel with Caroline Glover
Caroline is the first to credit her local farmers and growers for every dish at her beloved “scratch-to-table” establishment, Annette. Pair that humility with an impressive resume—from the Culinary Institute of America to New York City’s Spotted Pig—and you'll see why she's been recognized from likes of Food and Wine, Bon Appétit, and why she won the James Beard Award for Best Chef (Mountain Region) in 2022.

Scratch to Table
Adamant about sourcing local and sustainable ingredients, Caroline tries to make all her recipes from regional "scratch." This approach has earned her recognition as a best new chef by Food & Wine, a spot in Bon Appétit’s “50 Best Restaurants in America,” and Eater Denver’s Restaurant of the Year.
Holding Space
Caroline wants anyone who dines with her to feel at home. When you sit down for a meal, she has three simple requests: “Sit. Drink and eat. Be my guest.” She creates space for people to share food and stories they’ll never forget.
An Eye for Craft
Just as Caroline meticulously plots all her dishes—from saute pan to the staging counter—Oaxaca is a place full of artists who have mastered their crafts. Caroline cannot wait to go behind the scenes and witness the act of creation.

I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.
