You’ve heard the legends about Oaxacan gastronomy, yet you’re still unprepared for all of these incredible flavors, the notes of chili pepper, chocolate and fresh herbs. It’s your first bite of mole negro—just one of the region’s seven moles, refined over centuries, complex and intoxicating—prepared just for us in the home of a master potter. It’s been this way all week; from walking the agave fields with a fourth-generation mezcalero to inviting the healing energies of a renowned shaman, every waking hour has roused your senses, and suddenly this trip seems less like a vacation and more of an experience for the senses. This is Oaxaca, a city in love with innovation yet rooted in tradition, a banquet for the senses and a sanctuary for the soul.
Joining you on this unforgettable adventure is Diana Dávila, the firebrand chef behind Chicago’s trending hotspot, Mi Tocaya Antojería. Take one bite of her beer-can chicken with xoconostle, and you’ll know exactly why the likes of Thrillist, The Wall Street Journal and Chicago Tribune have sung her praises in unison. A Food & Wine Best Chef and James Beard Award nominee, Diana’s culinary journey started at her family’s taqueria when she was ten, but her profound culinary education took place in Oaxaca. It’s a place she knows by heart, and we can’t wait to explore it alongside her.
No matter how much you may know about Oaxacan culture and food, this journey will teach, delight—and leave us hungry for more. Wander colorful markets, taste incredible street food from moles to tlayudas, then wash it all down with the finest artisanal mezcals. This is Mexico like you’ve never imagined.

3 Reasons to Travel with Diana Dávila
Culinary school in Oaxaca. A stint at Chicago's Michelin-star Boka. A driving force behind D.C. hotspot Jackie's. Diana has zigzagged across the continent honing her craft since she was 18. Today, she finds herself back in Chicago helming her own kitchen, Mi Tocaya Antojería, where every dish is uniquely personal—an ode to family recipes and childhood memories of summers spent in La Huasteca.

Oaxaca vs. Paris
Diana was given the choice of either Paris or Oaxaca to kickstart her culinary education. She chose Oaxaca. Even today, she continues to draw inspiration from its vibrant and colorful markets.
On the Shoulders of Giants
Diana learned how to make her first scratch chocolate from Zapotec women who had learned the craft from their mothers—today, you taste the legacy of those female culture keepers in every dish she makes.
Todos Ponen
Diana is a key player behind Todos Ponen, the Chicago initiative that actively combats food insecurity for underserved families in the Logan Square, Avondale and Hermosa neighborhoods.
Your Experience

“Oaxaca is magical, a place where preservation is just as important as renovation.”
Oaxaca City, Monte Albán

“The markets remind us that art can be made from anything and everything.”
I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.
