You’re navigating a labyrinth of medieval souks as the call to prayer echoes out from ancient mosques. Spices and sizzling kebabs perfume the air. You’re in Marrakech, emerging at dusk into the buzzing heart of the city, Djemaa el Fna, as the vast square fills with soothsayers and snake charmers, musicians and acrobats. Shouts from merchants and food sellers compete for your attention. The experience is chaos, it’s commotion—and it’s incredible, plucked from time and swirling with color and flavor. This is the Morocco you’ve always dreamed of.
Your traveling companion is Chef Gregory Gourdet. Portland’s acclaimed chef has cooked everything from French to Thai, and draws inspiration from his Haitian roots. Gregory’s true break-out was becoming a finalist on Top Chef. Since, he’s published a cookbook, gotten lauded locally and nationally, returned as a judge to Top Chef and—in the midst of one of his busiest and most intense years—has been dreaming of exploring the flavors and cultures of North Africa. Gregory is ready to sample anything and everything with us in the name of culinary exploration.
If your idea of the perfect adventure involves slowing down and experiencing a place deeply, this trip is for you. Learn the meaning and tradition behind every bite, at bustling souks and markets, and at hands-on workshops with chefs and artisans. Experience Morocco at its most timeless and delicious.

3 Reasons to Travel with Gregory Gourdet
Over the past decade, Gregory Gourdet has become one of Portland’s most distinctive and beloved chef personalities, from his ultra-marathoning to inventive cooking. His place as a Top Chef finalist in 2015 secured him a spot in the foodie limelight, but that was only the beginning. Join us and Gregory in Morocco for an energized tour of heritage and flavor.

Hometown Hero
As one of only two Portlanders ever to compete on Top Chef, Gregory wowed the judges on his season’s finale. So much so, they invited him back this season as a Top Chef judge. He’s a guy who likes to dive in and go big.
Cultural Connection
Gregory’s family is Haitian. So naturally, dinners at home are filled with traditional Caribbean flavors. He’s traveled back to Haiti to cook and recently staged a Haitian dinner at the James Beard House. He’s taking major strides in bringing his culture’s narrative to the food world.
The Next Step
After years of honing his talents at restaurants, Gregory’s next endeavor is opening his own spot in Portland: a wood-fired, globally influenced concept focused on bringing iconic Haitian favorites to life. We can’t wait.

Where We Sleep

Serene kasbahs and traditional riads—our Moroccan accommodations are meant to treat, heal and comfort you
La Maison Arabe
MarrakechLuxuriate in this palatial riad, a traditional stately home centered around a lush courtyard just steps from the medina. It's the epitome of elegance, offering traditional Moroccan craftsmanship, a world-class restaurant and hammam spa. But we won’t blame you if you spend all your time lounging by the swimming pool beneath the swaying palm fronds.

Kasbah Bab Ourikah
Atlas MountainsKasbahs are former fortresses built with high walls—which for us means sweeping views over Ourika Valley farmland and the serene foothills. The sunsets and stargazing here are spectacular. Wander the gardens, relax on your private terrace or in the infinity pool. Our kasbah experience is stylish and nurturing, a peaceful mountain escape with all the modern comforts.

Palais Amani
FesA traditional, opulent riad in the center of Fes with all the comforts of a modern stay. The family-run property puts an emphasis on local, working exclusively with a close community of artisans and craftspeople. With its palatial gardens, rooftop deck and traditional hammam spa, it is the definitive Fes getaway.

We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
