Astonishing and sumptuous. So many delicately prepared dishes and cocktails, each crafted with ceremony and purpose. You’re in one of Japan’s most exclusive restaurants, the anticipation building as a kimono-clad server sets a delicate bowl before you. Inside, it’s a work of culinary art honoring centuries of tradition, perfectly matched with the season’s ingredients. All this week you’ve met chefs, bartenders and artisans at the peak of their craft. You’ve seen how the different threads of architecture, history, and cuisine culture are woven together, and you realize that everything—even this humble kaiseki meal—is a stunning ode to Japanese tradition.

With us on this adventure is superstar chef Sean Brock, son of rural Appalachia turned global culinary phenomenon. We could prattle on about Sean’s many James Beard nods — for restaurants and cookbooks — or how Esquire, Bon Appétit and the New York Times all named his eateries as “Best New Restaurants.” But what we love most about Sean is the luminescent devotion he pours into anything he touches, from the cozy-yet-polished plates at his flagship restaurant Audrey (named for his grandma), to the music he plays for fun. Fun fact? He’s obsessed — his word, not ours — with Japan and in 2023 transformed one of his Nashville dining rooms into a Tokyo-style listening bar stacked with rare vinyl, vintage speakers and perfect cocktails. In October, he’ll open our eyes to his Japan: the early morning tuna auction where he sources fish for his restaurants, a graceful kaiseki dinner at an Izu ryokan, and the art of Japanese pizza.

3 Reasons to Travel with Sean Brock

Sean’s introduction to Japan came in 2011, as a comparatively unknown young chef cooking alongside legendary culinary personalities Magnus Nilsson, David Chang and René Redzepi. Anthony Bourdain arrived to film a segment of “No Reservations,” and immediately connected with Sean’s quiet southern charm and adventurous spirit. They toured the country, cooking and filming in villages, mountains and cities—and the rest is history.

Shared Consciousness

Ancient social rules govern Japanese life. This lends mindful structure to every interaction, from simple greetings to business deals. As a community-oriented chef who’s deeply sensitive to the souls around him, Sean has embraced Japan’s collective mindset as a path toward harmony in his own life and work.

High Fidelity

Sitting between the speakers in a Japanese Listening Bar, you can feel the music in your body, as if you were in a recording studio with musicians playing all around you. Sean describes this as a “3D, almost psychedelic experience,” and it's one of his favorite pastimes in Tokyo.

Izu & Appalachia

Sean feels a connection between his old Blue Ridge Mountain home and Japan’s misty higher elevations, which both lie along the 36th parallel. Though different, both cultures approach food as a partnership between people and landscape, and revere ingredients as anchors for tradition and exploration.

Your Experience

“In my kitchens, we look to Japan for wisdom because the cuisine is so much older there.”

“If I had to eat only in one city for the rest of my life, Tokyo would be it.”

We’ll tour behind the scenes at a local wasabi farm, and sit down to a family-style meal of sashimi and fresh seasonal vegetables.

The cable car up to Panorama Park gets us one of the finest views of Mount Fuji (assuming the weather is kind). After admiring her sacred summit, we’ll head to our lodging for the night: a traditional ryokan (inn). It’s a stunning 150-year-old architectural museum surrounded by nature, with its own natural hot springs. Here, bathing in the traditional baths, we commit ourselves to pure relaxation.
