Best of Bilbao, San Sebastián and Rioja
The last few days in the Basque Country have unfolded as a sensory banquet: avant-garde art of in Bilbao, medieval stone castles perched above the sea, and succulent lamb roasted over grapevines, paired with velvety reds from the vines next door. Tonight, you’ll embark on a pinxtos crawl through the historic bustle of San Sebastián, and tomorrow promises exclusive access to fish markets, wine estates and cider houses. But for now, in this timeless haven, you raise a glass of cider and relish every detail— its tannic, earthy notes, the whisper of white Mamula apples and the esteemed company of kindred spirits at the sprawling table before you.
You’ll travel alongside St. Louis restaurant impresarios Michael and Tara Gallina. They’re seasoned hosts whose collected accolades include four James Beard Award nominations and “Best New Chef/Restaurant” nods from Food & Wine, Bon Appétit, Esquire and Eater. The Gallinas are true world travelers—Micheal even spent months staging in restaurants all over Spain—with curious hearts and a deep love of coastal Europe.
If you want a feast for all the senses, this trip is for you. Wander colorful markets, visit one of the world’s greatest museums, soak in the timeless magic of ancient mountain villages and rustic taverns. Connect with the chefs, shepherds and winemakers who’ve harnessed centuries of tradition to produce the world’s most exquisite food and drink. This journey to the Basque Country will teach you, delight you, and feed your soul — leaving you full of joy, and hungry for more.

3 Reasons to Travel with Tara and Michael Gallina
Michael and Tara are passionate about eating well; at St. Louis' widely acclaimed Vicia, they’re known for fine dining that’s at once elevated and playful. This is their second Modern Adventure, and we’re happy to report that that they’re just as lovely in person.

Catch a Fire
Deeply inspired by the Basque region’s wood-fired traditions, Michael and Tara built Vicia around the idea that fine ingredients shine brightest when they’re prepared simply: lightly kissed by fire so that their true flavors come to life.
A Storied Glass
At Michael and Tara’s restaurants, every plate tells a story — of the farmer, of the season, of their mood in the kitchen that day. It’s much the same in Basque Country, where they’ll leads us in toasts of heirloom cider and sparkling txakoli—two of their favorite beverages—alongside local masters.
Creatures of the Night
With a long lunch and an afternoon siesta as cultural hallmarks, the Gallinas are ready for the summer nightlife. From savory pinxtos to cañas of crisp lager, they can't wait to spend a few raucous evenings in true Basque style.
Your Experience

“Spain is known for molecular gastronomy, but in Basque country it's even simpler — they really just let the ingredients shine in the best way you can.”
Bilbao, San Sebastian and Rioja

“In Basque Country, the real culture lives at night. ”
Great guides, innovative programming and attention to detail.
Modern Adventure opened doors that we would not otherwise be able to experience.
Each hotel became more beautiful, each quaint and modern and staffed by the greatest humans ever.
Where We Sleep

Traditional architecture meets contemporary design. Enjoy the understated luxury and sophistication of our boutique Basque Country hotels.
Hotel Gran Domine
BilbaoSituated between the Fine Arts Museum, Iberdrola Tower and Euskalduna Palace, this design-forward hotel is an art lover’s destination unto itself. It’s located just a stone’s throw from almost everything Bilbao is known for, and so close to the Guggenheim that it almost feels like Jeff Koons’s 43-foot-tall puppy is about to charge the lobby. Make like a local and throw back a cocktail on the beautiful rooftop terrace.

Hotel Viura
Álava, RiojaThis 33-room boutique hotel is an architectural masterpiece, a striking cubic structure that seems to have fallen from the heavens right onto a carpet of lush green vineyards. Tucked away into the tiny hamlet of Villabuena de Álava, this is both a sumptuous wine country retreat and a throwback to village life, a place where time is measured in church bells and birdsong. Not surprisingly for wine country, the hotel cellars are stunning — prepare to be seduced.

Zenit Convento San Martin
San SebastiánLocated just off La Concha, the seaside promenade that forms the beating heart of San Sebastián, this serene hotel, housed in a beautifully restored 16th-century convent, is the perfect spot from which to explore the city’s vibrant Old Town — as well as a welcome retreat at the end of the night, when the vaulted ceilings and stained-glass windows of the lobby bar feel particularly magical.
