You’re standing in a field framed by rugged mountains, the taste of fine Sherry lingering in your mouth. You’re deep in the Spanish countryside savoring a farm-to-table meal alongside a world-class chef, clinking glasses and toasting to all the wonders of Andalucía and southern Spain: acorn-fed Ibérico hams, aromatic goat’s-milk cheese, organic wines, the freshest seafood. Tomorrow, you’ll trade the campo for Seville and the picnic table for a string of bustling tapas bars. And just when you think you’ve experienced it all, a private flamenco performance propels you even further into the magic of the region. You’re experiencing what the Andalusians call alegría: an explosion of food, wine, laughter and joy. This is southern Spain, a place where cultural and culinary traditions are handed down through the centuries—and there’s nothing comparable.

With us are Denver culinary superstars Jen Jasinski and Max Mackissock. Respectively, they’ve racked up some of the most coveted honors in the food world. Max has received multiple best chef and best restaurant accolades in Denver (and NOLA) for his dining concepts including his most recents BarDough and Sofia NOLA. As for Jen, she received the James Beard ‘Best Chef Southwest’ title for her beloved Mediterranean restaurant, Rioja, while racking up accolades for Bistro Vendôme, Stoic & Genuine and Ultreia as well. Together, they are going to show us southern Spain’s best tapas, finest Sherries, and freshest seafood — yes, even sea snails (trust us!).

Day by Day

Day 1

Bienvenidos a Málaga! This southern Spanish port is one of the world’s oldest cities, and over its 2,800-year history it’s been occupied by the Phoenicians, Romans and Arabs, each infusing Málaga with their distinctive architectural and culinary legacies.

We’ll meet up at our hotel with Jen and Max and set out on a late-morning gastronomic degustación through the cobbled streets of Málaga’s old quarter and down to the seafront. On the beach we’ll try vino dulce, the Malagan sweet wine that traditionally accompanies tapas here. All around us are views of the Moorish citadels of Alcazaba and Gibralfaro, the spectacular buff-colored stone ramparts overlooking the sea.

We’ll have time on our own this afternoon to explore further. Art lovers will want to take in the Pompidou or Museo Picasso, the latter an homage to Málaga’s most famous son. We’ll reconvene in the evening for cocktails and a welcome dinner featuring the freshest Mediterranean seafoods: Málaga’s iconic fritura malagueña.

Day 2

This morning we trade beach for mountains, starting at a rustic goat farm near Casabermeja. We’ll learn first-hand about the goatherds’ daily routine and cheese-making techniques, tasting as we go. Lunch on the farm is served al fresco under the shade of a centuries-old oak tree.

After lunch, we’ll head to a nearby pueblo blanco (white village) and meet the family of winemakers at fourth-generation Bodegas Dimobe. Here, Syrah and Romé grapes grow on steep-sloped, shale-soil vineyards that produce superb red, white and fortified wines from their own protected Designation of Origin, Sierras de Málaga D.O. We’ll also see the paseros, or grape-drying racks, that are used locally to dry grapes before converting them to Málaga sweet wine or to pasas (raisins). Back in Málaga, the evening is ours to enjoy; take in a tangerine-and-gold sunset with a rooftop cocktail, and maybe tackle a late-night tapas crawl.

Day 3

This morning we say farewell to Málaga and depart for Jerez de la Frontera, one of the three towns that form Spain’s celebrated ‘Sherry Triangle.’ Here, the limited rainfall and strong sun give local grapes—Palomino for dry, Pedro Ximénez and Muscat for sweet—their uniquely high sugar content, producing wines with elevated alcohol content and a rich golden hue. Sherry was once highly regarded (and William Shakespeare’s drink of choice); today it’s associated with the brandy-fortified cooking version and widely under-appreciated. We’ll taste true Sherries at a small, family-run bodega in the city center, using a traditional venencia to serve traditional Sherry straight from the barrels. It’s the perfect prelude to our home-cooked bodega lunch on the patio.

The afternoon is ours to rest and relax, before meeting up at one of Jerez de la Frontera’s oldest and most traditional tabancos, or Sherry pubs, where locals used to bring their own jugs to fill and sip while passing around the guitar. Our private dinner is an intimate celebration capped off by our very own flamenco show, the typically Andalusian spectacle of color, music and dance.

Day 4

Our destination this morning is Sanlúcar de Barrameda, another historical standout in the Sherry Triangle, nestled at the mouth of the Guadalquivir river. Sanlúcar is the home of manzanilla, a dry, fortified white wine. We’ll get to know it well today at Bodegas Hidalgo la Gitana, where the cellars rest just a few hundred yards from the Atlantic Ocean, allowing the salty sea breeze to determine the wines’ character. We’ll taste as we go, then taste some more, over a light bodega lunch and pairing.

In the afternoon we’ll visit a vegetable farm that supplies some of Spain’s top restaurants. Our host, the farm owner, will introduce us to navazo, Sanlúcar’s unique and centuries-old crop-irrigation technique, while we gather produce to prepare tonight at a hands-on dinner with Jen and Max in Sanlúcar.

Day 5

It’s a short drive to Seville, Andalucía’s bustling capital and our base for the next few days. But first, we’re headed north into the mountains of Sierra de Huelva, home of the world-renowned Iberian pig. We’ll wend our way through hilltop towns near the Portuguese border, where jamón ibérico de bellota—truly, the finest hams in the world—are cured in fresh mountain air for up to three years. It’s here we’ll meet a farmer for a personal tour of his pig farm: the acorn-strewn grounds where pigs graze, and the salting area too. We’ll taste every fresh cut of jamón, including the world-famous Cinco Jotas (5J) that comes only from purebred Ibérico pigs raised free-range. Our lunch in the nearby village of Jabugo features more ham plus regional cheeses and freshly harvested vegetables—all accompanied by local wines.

We’ll have time back in Seville this afternoon to explore on our own before reconvening for an epic tapeo, a tapas crawl led by Jen and Max through the city’s back alleys, choosing among succulent seafood and regional specialties such as solomillo al whisky (pork loin in a whisky sauce), savory toasts, and spinach with chickpeas. ¡Ponerse púo!—bring it on! 

Day 5 Highlights

Day 6

Seville has been occupied by the Phoenicians, Greeks, Carthaginians, Romans and Moors; a tour down its bustling streets is the best kind of immersive history lesson. Alongside Jen and Max, we’ll e-cycle through the city, taking advantage of the plentiful bike lanes to roam the historically working-class neighborhood of Triana. This district alone has produced more than its fair share of famous bullfighters and flamenco dancers, and traditional ceramics still adorn many of its buildings. We’ll conclude our e-bike ride in the old quarter of Santa Cruz, where centuries-old gardens and whitewashed houses open onto squares anchored by towering medieval cathedrals and bell towers.

Rest up this afternoon, and bring your appetite for an epic farewell dinner overlooking the river in Triana, prepared by Jen, Max and a local chef, and inspired by everything we’ve tasted this week. This will be a celebration to remember!

Day 7

After breakfast, we’ll say farewell to Jen and Max and to our new friends, and transfer to Seville’s airport for flights home. Our time together has come to an end, but Andalucía will remain in our hearts.

In the heart of Málaga's historic core, this luxurious 18th-century palacio (mansion) is a destination in its own right. The contemporary interior takes inspiration from the palacio’s original construction: beamed ceilings, marble pillars, wrought-iron balconies, and beautiful Moorish cordobanes (decorative leather hangings). The Museo Picasso, Roman theater, cathedral, and Alcazaba are all just around the corner.

The world's first 'Sherry hotel' is housed in a former 19th-century winery in the heart of Jerez’s old quarter. Former workers’ cottages have been transformed into sumptuous guest rooms surrounded by serene gardens and vine-covered courtyards. The hotel terrace has a swanky rooftop pool and bar with deeply satisfying views of Jerez's 17th-century cathedral and Alcazar.

This regal five-star hotel is one of the grandest in Seville. Much of the original 18th-century décor remains, with black-and-white marble floors and elegant garden courtyards, creating a sumptuous backdrop. The rooms have all the comforts you'd expect; the terrace has a small pool and stunning views of central Seville.

  1. What does the price include?

    Six nights at unique four- and five-star accommodations; private travel for all day trips and excursions; departure airport transfer; private tours with local guides and cultural experts; exclusive access and private tastings; guided activities, adventures and expeditions; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

  3. Where does the trip start and end?

    Our adventure begins at the Palacio Solecio hotel in Málaga. The closest airport is the Málaga-Costa del Sol Airport (AGP). On our final day together, we will organize transport to the Seville Airport (SVQ). Your flight home should be scheduled to depart at 1pm or later from here.

  4. What travel documents are needed?

    US citizens are not required to have a visa for stays under 90 days in Spain. Just bring a valid US passport. For citizens of other countries, please check with the Spanish Embassy or Consulate for information and requirements.   

  5. Do I need to pay a solo traveler supplement?

    For solo travelers, there is a $1,500 single-supplement fee—paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.

  6. Who is going on this trip?

    Our adventures typically have between 10 and 18 guests, and our Modern Adventure Team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading this trip?

    This trip is led by an expert Modern Adventure Trip Leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. Do I need Travel Insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

  9. What is the cancellation policy?

    You may cancel on or before May 7, 2023 and receive a full refund minus a $500 per-person service fee. If you cancel on or after May 8, 2023, there is a 50% cancellation fee. On or after July 6, 2023 there is a 100% cancellation fee. We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (see our Terms and Conditions for full details).
