Oaxacan-born Chef and Visionary behind Chicago's Istmo, Carlos López Muñoz
The air is thick with rich aromas—chilies, chocolate, and nuts harmonizing on the metate, weaving a luxurious mole that speaks to centuries of craft and tradition. Yesterday, you strolled through agave fields as a fourth-generation mezcalero shared the secrets of Mexico’s iconic spirit. Tomorrow promises lessons in ancient techniques from ceramic artisans and spiritual shamans alike. But, for now, as you savor the first spoonful of mole, it’s a communal feast that mirrors the spirit of Oaxaca—vibrant, rooted in community, and an exquisite ode to both the present and the past.

3 Reasons to Travel with Carlos López Muñoz
Carlos López Muñoz is the chef behind Chicago’s acclaimed Istmo, named Best New Restaurant in 2024 and Best Restaurant in Chicago in 2025. Born and trained in Oaxaca, Carlos refined his craft alongside celebrated chefs including Carlos Gaytán and Rick Bayless. His cooking blends Indigenous techniques, seasonal ingredients, and a contemporary perspective to tell the story of his homeland through food.

Market Value
For Carlos, the market is Oaxaca at its most honest. Everyone comes here—farmers, cooks, families, artists—and every stall holds a conversation waiting to happen. You might arrive searching for an ingredient and leave carrying a recipe, a story, or an invitation. Markets aren’t simply places to shop; they are how knowledge, memory, and community move through daily life.
The Mole of the Story
Carlos speaks about mole the way others speak about family history: layered, emotional, impossible to separate into parts. Cinnamon, chile, oregano, chocolate, smoke, bitterness, and sweetness folded together over time. “A little bit of everything,” he says. For him, mole reflects the essence of Oaxaca itself, where complexity is built patiently and meant to be shared.
Todos Familiares
In Oaxaca, hospitality begins long before anyone sits down to eat. Carlos grew up in a culture where guests are folded naturally into daily life and welcomed into kitchens, workshops, mezcalerías, and family tables. Traveling with him means experiencing the region through the people who make it: potters, weavers, cooks, and artisans creating not for attention, but because it’s part of who they are.
I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.

Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
