Chef & Owner of DANTE, Omaha's beloved Italian Restaurant, Nick Strawhecker
The taste is layered and slow, revealing itself like a well-composed sonata. You’re drinking Barolo where it was born—each pour just steps from the vines that first gave it shape—alongside a wedge of hard-to-find aged cheese, its texture and tang a testament to time. The vineyards unfurl to the edge of the Alps, where golden light settles across the valley. In this stillness, the meaning is clear: mastery is in the making. Truffles are next, earthy and tender, followed by a dessert kissed with local hazelnuts. You lift your glass in a salute to flavor, to patience, to presence.

3 Reasons to Travel with Nick Strawhecker
Chef Nick Strawhecker is the founder of Omaha’s Dante and has been returning to Piedmont since his early twenties, when he first studied and cooked in Costigliole d’Asti. The region shaped how he tastes and travels. Today, he returns often—walking vineyards, cooking alongside friends, and collaborating with La Raia winery—bringing those relationships back to his own table.

Wine Not?
Nick likes to call Piedmont the mecca of Italian winemaking and for him, it’s where wine becomes conversation. Generational estates sit alongside quiet innovators, each bottle carrying decisions, risks, and inheritance. These are wines Nick returns to again and again, drawn to their depth, restraint, and the people whose lives are poured into every glass.
Farmers to Farmers
Nebraska raised Nick to understand land, seasons, and the dignity of work done well. In Piedmont, he sees the same values in farmers who know their soil intimately and protect it fiercely. Traveling with him reveals those parallels, where conversations move easily from vineyards to fields, and food feels inseparable from the people who raise it.
Working with Hand & Heart
For Nick, hospitality comes before technique. It’s the quiet assurance that someone is cared for and the hand over the heart that says, consider it done. In Italy, that generosity is instinctive. On this journey, meals become moments of listening, learning, and shared humility, shaped by the belief that kindness and curiosity are as essential as skill.
I was blown away by how flawlessly Modern Adventure fulfilled and exceeded my expectations.
Scuffing through the leaves on the truffle hunt in the woods, and then later eating at the truffle-dog owner's home—incredible!
The activities built to a crescendo from start to end of the trip. Well paced.
