Aldo Zaninotto, the force behind Chicago’s beloved Osteria Langhe, has spent over two decades championing the wines and cuisine of Piedmont. Raised between Brussels and Italy, he honed his skills in fine dining before becoming an import manager for some of Piemonte’s most esteemed wineries. His deep expertise and relationships across Italy’s wine world inform every detail of his restaurants. Today, through A to Z Hospitality, Aldo shares his lifelong passion for Piemonte’s food, wine, and culture—bringing its flavors and traditions to life in the heart of Logan Square. His nuanced knowledge of the region make him the ideal chef to accompany us on this culinary journey through Piedmont for an authentic taste of the region’s rich food and wine culture.

After a decade in fine dining across Europe and the U.S., Aldo shifted his focus to wine—spending 20 years forging deep relationships with Italy’s most iconic producers. His passion ultimately led him to Piedmont, where the soulful winemaking culture inspired him to open Osteria Langhe as a tribute to the region’s depth and tradition.
Focus on the Locus
Piedmont’s cuisine is a study in seasonality—rooted in comfort, tradition, and a deep connection to place. That simplicity is what drew Aldo in. Alongside Culinary Director Cameron Grant, he opened Osteria Langhe to offer a heartfelt, ingredient-driven interpretation of the region’s food, honoring dishes that speak to both heritage and hospitality.
Mother Tongue
“Langhe” means tongue—and in Aldo’s world, everything meaningful in food and wine passes over it. Piedmont, shaped by centuries of cultural exchange and political autonomy, has a language all its own. With French, Hungarian, and indigenous influences layered into its history, the region is proudly individual—just like its cuisine.
Giorgio was a delight, so warm and open. Traveling with him in his native Piedmont was such a privilege.

What does the price include?
Six nights at boutique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; departure airport transfer; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

International roundtrip airfare to and from Italy; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

Where does the trip start and end?
Our adventure begins and ends in Torino, Italy. The closest airport is the Torino International Airport (TRN). We recommend arriving one day early to ensure you’re at our starting point on time.

What travel documents are needed?
US citizens are not required to have a visa to enter Italy for stays up to 90 days. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Italy.

Do I need to pay a solo traveler supplement?
For solo travelers, there is a $1,800 single-supplement fee—paid at the time of booking to secure a private room. These spots are extremely limited and available on a first come, first serve basis.

Who is going on this trip?
This trip will have no more than 16 guests, plus our Modern Adventure team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

Who is leading the trip?
This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

What is the cancellation policy?
You may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.

Do I need Travel Insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
