Rising Star Chef & Immigrant Advocate, Christian Irabién
The air is thick with rich aromas—chilies, chocolate, and nuts harmonizing on the metate, weaving a luxurious mole that speaks to centuries of craft and tradition. Yesterday, you strolled through agave fields as a fourth-generation mezcalero shared the secrets of Mexico’s iconic spirit. Tomorrow promises lessons in ancient techniques from ceramic artisans and spiritual shamans alike. But, for now, as you savor the first spoonful of mole, it’s a communal feast that mirrors the spirit of Oaxaca—vibrant, rooted in community, and an exquisite ode to both the present and the past.

3 Reasons to Travel with Christian Irabién
Chef Christian Irabién is a celebrated culinary talent with roots in Mexico and the U.S., blending coastal Mexican traditions with modern techniques. He honed his craft at José Andrés’ Oyamel before founding Amparo Fondita, where he highlights seasonal ingredients and contemporary Mexican cuisine. A passionate advocate for immigrant workers, he launched Muchas Gracias! during the pandemic, earning the 2020 “Keepers of the American Dream” award. He also leads Hospitality Humans and co-founded the Latino Executive Network to uplift Latino professionals. As a U.S. Culinary Ambassador, Christian continues to use food as a bridge for cultural connection and social impact.

Ancestral Flavors
For Christian, food is a way to honor family and heritage. His restaurant is named Amparo—after his great-grandmother—meaning "shelter," a fitting tribute to the warmth of home-cooked meals. His journey began in his grandparents’ Yucatán seafood spot, and today, he refines their recipes through a modern lens, blending tradition with fine-dining precision to keep their legacy alive.
To Your Health
In Oaxaca, mezcal is more than a drink—it’s medicine, ritual, and history in a glass. Christian reveres this sacred agave spirit, from its role in healing remedies to its place in community ceremonies. Far from mass-produced tequila, mezcal remains one of the purest, most artisanal spirits, deeply woven into the fabric of Oaxacan culture.
Teaching Kitchen
At Amparo, cooking is about more than technique—it’s about opportunity. Christian builds his team from the Latino and immigrant communities, opening doors for those without formal training. His chef de cuisine started as a dishwasher, learning step by step until she led the kitchen. It’s a philosophy rooted in mentorship, resilience, and lifting others through food.
I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.
