3 Reasons to Travel with John Manion

John’s love of South American culture and cuisine started at an early age — eight years old to be exact, when his family moved to Sao Paulo, Brazil. Before long, he was learning the customs and cultures on travels across Argentina and South America. Now in Chicago, he is known for his live fire cooking.

John’s soulful connection to Argentina extends far beyond its food. It’s the art, design, and cocktails of Buenos Aires. It's cooking a steak sizzling over an open flame in the Uco Valley. Throughout his extensive time traveling in Argentina, John has built lifelong friendships with winemakers, chefs, artists and cultural tastemakers. Visiting these local comrades and catching up over a Fernet y Coke is what it's all about for John.

His Food is Fire

John has a reputation around Chicago as the “King of Live Fire”, and for good reason. He’s perfected his techniques throughout his career as a chef. El Che is consistently ranked as one of the best steakhouses in Chicago, standing out from the competition with a fierce commitment to Argentine asador traditions. Most recently, he has teamed up with Fitzgerald’s, an historic music venue to create Babygold Barbecue.

Day 1: Buenos Aires

November 17, Mon

Bienvenidos a Argentina! Our trip begins in the evening when we’ll convene at our hotel for a sumptuous introduction to Buenos Aires. After getting to know John and munching on a few local specialties, we’ll venture out into the city for an immersive dinner while toasting the adventure ahead.

Afterwards, we’ll absorb the buzzing energy unique to Buenos Aires with a live, rooftop tango show.

Day 2: Buenos Aires

November 18, Tue

Today we’ll embark on a tour of a few historic neighborhoods bursting in local color and lore. First it’s off to the barrio Recoleta for an immersive tour. Then we’ll head to the 1908 Colón Theater, South America’s finest to enjoy an insider’s look at the ornate building’s frescos, backstage area and studios.

Next, we’re off to unforgettable Palermo, lined with its mesmerizing street art and bustling local markets. We’ll sit down for lunch where we’ll roll our sleeves up for an authentic Argentine cooking class. 

After an afternoon of exploring Buenes Aires on your own, we’ll reconvene together for dinner at one of Buenos Aires’ top restaurants where we’ll enjoy a single surprise tasting menu full of haute cuisine with Argentinian soul.

Day 3: Buenos Aires

November 19, Wed

We’ll continue our exploration of Buenos Aires for a unique street food experience where we trace the origin stories of specific ingredients while rambling through one of the city’s most iconic neighborhoods. We’ll start in San Telmo, the city’s oldest barrio, whose cobbled alleyways make up the heart of tango; continuing on to the unforgettable La Boca, lined with its iconic bold and brightly painted buildings. Once there, we’ll listen to street musicians on Caminito street and indulge in a family-style lunch.

After lunch, we’ll hop on a short flight to Mendoza. Here, we’ll toast our arrival, marvel at the storybook views in every direction, and enjoy an evening of rest.

Day 4: Mendoza

November 20, Thu

This morning we begin our time in the heart of Argentina’s wine country by relaxing at the hotel, enjoying its stunning grounds and spa services.

In the afternoon we’ll visit the local vineyards for a tour and tasting. Their winemaking ethos focuses on a quintessentially natural process, in which all grapes are hand harvested and most are foot crushed.

In the afternoon, we’ll visit Santa Julia Bodega, a winery known for producing some of the region’s finest olive oils. There, we’ll try our hand at making clay-oven empanadas from scratch at Pan y Olivia, learning how to use seasonal ingredients to create mouth-watering traditional dishes.

After some downtime at our boutique hotel, we’ll regroup for a look into Mendoza, the nearly 500-year-old bohemian town with an Art Deco center. If you’ve ever enjoyed a glass of Malbec, you’ll love its homeland.

Day 5: Mendoza

November 21, Fri

We’ll start the day in exquisite repose—seriously, you’ll have time to relax and stroll the grounds of our breathtaking hotel or even breakfast in bed.

Today we’ll spend our time at a renowned, picturesque family winery. While there we’ll savor a stunning wine-paired lunch with the Andes Mountains literally hovering behind us. Then for dinner, we’ll enjoy a one-of-a-kind menu of the charred delicacies of an authentic asado!

Day 6: Uco Valley

November 22, Sat

After breakfast, our wine immersion begins anew. Our first stop begins with a refreshing toast of sparkling wines—each bottle derives from hand-picked varietals sourced from the Uco Valley. Every transcendent wine tasting deserves another, so we’ll shuffle over to another heralded estate for a flight of some younger wines and a conversation with the cellarmaster.

Our bellies full, we’ll check into the beautiful Alpasion Lodge and take some time to decompress and relax.

Day 7: Mendoza

November 23, Sun

Today we tap into our inner gaucho with a full-on Andean adventure climbing up the mountain on horseback! Afterwards, we’ll reconvene for lunch at a local hacienda—far from a simple boxed lunch, this will be a banquet of freshly harvested seasonal ingredients cooked with traditional gaucho methods.

After spending some time relaxing at the hotel, we’ll reconvene for our farewell dinner. We’ll watch in awe as a team of chefs prepare a gaucho-worthy feast of slow-grilled rib eye roasted on an open flame. Wrapped in alpaca blankets, we’ll toast with John to this perfect end to our week together.

Day 8: Mendoza

November 24, Mon

Alas, it’s time for our journey to end. We’ll celebrate our adventure over breakfast, with a last cortado or glass of Malbec, before offering fond farewells and transferring to the Mendoza Airport.

  1. What does the price include?

    Seven nights at unique five-star accommodations; internal flight from Buenos Aires to Mendoza; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverage not included in itinerary; gratuity for tour leader.

  3. Where does the trip start and end?

    Our adventure begins in Buenos Aires; the closest airport is Buenos Aires’ Ezeiza International Airport (EZE). Our trip ends in Mendoza, Argentina. On our last day together, we will take a group transfer to Mendoza’s Governor Francisco Gabrielli International Airport (MDZ). Your flight home should be scheduled to depart at 12pm or later from here if you’d like to participate in this transfer.

  4. What travel documents are needed?

    US citizens are not required to have a visa to enter Argentina for stays up to 90 days. The only requirement is a valid US passport. We recommend that your passport is valid for 6 calendar months beyond your planned departure date from Argentina.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers, there is a $3,200 single-supplement fee—paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.

  6. Who is going on this trip?

    Our adventures typically have between 10 and 20 guests, and our Modern Adventure Team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading the trip?

    This trip is led by an expert Modern Adventure Trip Leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip.

  8. What is the cancelation policy?

    You may cancel on or before August 18, 2025 and receive a full refund minus a $500 per-person service fee. If you cancel on or after August 19, 2025 there is a 50% cancellation fee. If you cancel on or after October 3, 2025 there is a 100% cancellation fee. We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or of the trip being canceled for unforeseeable reasons (see our Terms and Conditions for full details). Please note that for guests who are transferring trips or traveling on rescheduled trip dates, your cancelation terms will vary from the above, and are generally non-refundable. Please refer to your correspondence from our Customer Experience team for specific details.

  9. Do I need Travel Insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
