It’s lunchtime in the dry Atlas Mountains. You lift the lid off the clay tagine, sending plumes of steam scented with harissa and cinnamon into the arid afternoon air. The aromas take you back to the busy mayhem of the Fes medina, where you first experienced the buzz of Moroccan commerce, sweetened by cups of mint tea. In the coming days, you’ll mix spices with a master in Marrakech, and wander the painterly paths of Yves Saint Laurent’s gardens before tucking into a sumptuous evening feast. This is Morocco in full color, a dazzling mecca where culture and geography collide; where traditions are at once etched in stone — and renewed with every sunrise.

While living and working in the Middle East, Chef Zach traded stories and recipes with immigrants from across the region. He traversed north-African foodways while preparing Moroccan dishes with friends in Israel, and fermented Shabbat kubaneh bread in the kitchen he shared with a Yemenite family. What tales will we cook together in Morocco?

At Galit, Zach populates his wine list with bottles from lesser-known Middle Eastern wine regions in Lebanon, Palestine, Israel, and Armenia. It’s a way to support small family vintners — and a way to paint a more complete picture of the culinary culture in this complex, diverse region.

As a young cook in Tel Aviv, chef Zach learned the art of crafting perfect pita and hummus — and also labneh, halab and shawarma. In Chicago, he offers these plates with a friendly Midwestern caress, using local meats, dairy and produce.

Teaching Kitchen

Zach grew up in a traditional Jewish home, son to a rabbi — a world in which daily acts of empathy, responsibility and generosity are required as mitzvahs. He runs Galit according to this ethos, taking time to teach, support and listen to his staff and patrons, and we can’t wait to learn in his kitchen.

Day 1: Casablanca

September 4, Thu

Salam alaikum! Welcome to Casablanca, a city of intrigue and cultural crosswinds. After settling into our accommodations, we’ll meet our tastemaker and our fellow adventurists over cocktails, before making our way to an unforgettable welcome dinner

At the iconic Rick’s Café, we’ll be transported back in time, as if Humphrey Bogart and Ingrid Bergman were sitting at the table right beside us. As we take in the Moroccan décor and the soft notes of live piano, we’ll raise our glasses and toast with Andrew to the journey that lies ahead.

Day 2: Casablanca

September 5, Fri

After rousing ourselves with a Moroccan mint tea or cardamom-scented coffee, the fabled Casablanca awaits. First, we’ll head to the Hassan II Mosque, the seventh-largest mosque in the world. Erected at what seems like the world’s end, it balances on the ocean’s edge, blending the tradition of handcrafted marble with a retractable roof—a modern wonder steeped in ancient building methods.

Our journey then leads us northward along the coast to Rabat, Morocco’s elegant capital and its first imperial city. Exploring the Mausoleum of Mohammed V and the towering minaret of Hassan Tower Mosque, we’re captivated by the city’s rich history. Following a leisurely lunch in Rabat, we continue onwards to Fes, the spiritual and cultural heart of Morocco, where we’ll spend the next two nights.

Day 3: Fes

September 6, Sat

Fes was for centuries the ‘Athens of Africa’ and gathering place for the Islamic world’s brightest minds. It’s still a cultural and culinary beacon; its 8th-century walled-in medina is the most magical in all Morocco, beautifully stuck in time with donkeys pulling carts along narrow, cobbled lanes, and intricately wood-carved doorways renovated after the city was named a UNESCO World Heritage Site. We’ll start our exploration with an expert-guided walking tour of the Old City, known as Fes el Bali, sampling a myriad of delicacies, from fresh juices to aromatic spices along the way. After a hyper local lunch, we’ll have some free time to explore on our own. 

After a day of exploring, we’ll reconvene for an intimate dinner experience. Alongside a local chef, we’ll articulate the nuances of pairing vegetables, spice, and fire to create traditional Jewish dishes with Moroccan flavor profiles.  

Tastemaker Moment: Zach will collaborate with a local chef and prepare a Jewish-style dinner during this evening’s cooking session.

Day 4: High Atlas Mountains

September 7, Sun

We’ll catch an early flight to Marrakech this morning, but we won’t visit the city just yet. Instead, we’ll make our way east to the High Atlas Mountains, where rugged landscapes and panoramic views await. 

After a traditional lunch, we’ll dive right into the world of saffron: a local farmer will teach us how the world’s most precious spice is cultivated against the backdrop of the majestic mountains. The rest of the evening is yours to elaborate, perhaps soaking in the tranquility of our kasbah or adventuring through the nearby mountain trails. As evening descends, dinner will be available at leisure, allowing us to embrace the Berber tradition of simplicity and warmth.

Tastemaker Moment: During our saffron lunch, Zach will wax poetic about one of his favorite spices.

Day 5: High Atlas Mountains

September 8, Mon

This morning is all about wonder and beauty. We’ll immerse ourselves in the breathtaking landscapes of the High Atlas Mountains on foot, with a gentle hike through orchards and terraced fields. 

Lunch today is a hands-on experience; we’ll learn the art of crafting a traditional Berber tagine. While our fragrant sauce simmers, we’ll prepare our vegetables and meats, crafting the perfect bite. And, because no Berber meal is complete without it, we’ll end with sweet mint tea that seems to fly into our gorgeous Moroccan tea glasses. 

After a day full of adventure and creation, we’ll head back to the kasbah for some well-deserved rest and a tranquil dinner. 

Tastemaker Moment: Alongside a local family, Zach will add his own flair to a local tagine during lunch.

Day 6: Marrakech

September 9, Tue

Today, we’ll make our way back down the mountains to Marrakech, a city that rises from the desert and sits at the crossroads of Europe and Africa. Marrakech has a romance all its own, and rich culinary traditions to thrill every palate. We’ll jump right in at the Morocco Culinary Art Museum, where we’ll deeply understand the roots of traditional Moroccan favorites, from couscous to bread. 

Lunch today is hosted by an organization that empowers local women to start businesses — a culinary masterclass, and a lesson in the healing power of food … A feast for the belly and balm for the soul.

Late this afternoon, we’ll explore the bustling Jemaa el-Fna square, indulging in fresh and dried fruits, nuts, and spices, before breaking ranks to welcome an open evening on our own.

Tastemaker Moment: Zach will present the donation to the team at AMAL and speak to the importance of empowering and supporting women chefs.

Day 7: Marrakech

September 10, Wed

We’ll soak in the morning light at the enchanting Majorelle Gardens today. They’re a dreamy sanctuary filled with exotic botanical specimens from the far corners of the world and a labyrinth of crisscrossing alleyways and vibrantly painted buildings. Right around the corner, we’ll get our fill of fashion, Islamic art, and Berber culture at the Yves Saint Laurent Museum, which boasts over 5000 works in their permanent collection. 

Next we’re off to The Spice Lab, who make it their business to track down rare and unique spices. Here we’ll immerse ourselves in regional spices will help with the crash course in local tastes, including the famous Ras El Hanout, a bespoke ‘head of the shop’ spice mixture of rosebuds, orrisroot, belladonna berries, Chinese cinnamon, and cardamom. 

As the evening sky turns harissa red, our farewell celebration begins with a lesson in Moroccan mixology — and culminates with a traditional meal to remember. We’ll raise our glasses in toast to Zach, each other, and the gorgeous adventure we’ve shared.

Day 8: Departures

September 11, Thu

Alas, our time together has come to an end, but our hearts and bellies are brimming with Morocco. We’ll bid farewell to  our fellow Modern Adventurists and transfer to Marrakech airport.

  1. What does the price include?

    Eight nights at unique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access, tastings and hands-on cooking experiences; guided activities, adventures and expeditions; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare; travel insurance; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

  3. What are the arrival & departure details

    Our adventure begins at Four Seasons Casablanca in Casablanca, Morocco. The closest airports are Rabat-Salé Airport (RBA), about a 30-minute drive from our hotel, and Mohammed V International Airport (CMN), about a 90-minute drive from our hotel. Our trips ends in Marrakech, Morocco, roughly a 10-minute drive from the Marrakesh Menara Airport (RAK).

  4. What travel documents are needed?

    US citizens are not required to have a visa for tourist visits to Morocco less than 90 days, but are required to show a valid US passport. To enter Morocco, your passport must have at least six months of validity at the time of entry. For citizens of other countries, please check with the Moroccan Embassy or Consulate for information and requirements.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers there is a $1,500 single-supplement fee, paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.

  6. Who is going on this trip?

    Our adventures typically have between 10 and 20 guests, and our Modern Adventure Team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading this trip?

    This trip is led by an expert Modern Adventure Trip Leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. Do I need travel insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

  9. What is the cancelation policy?

    You may cancel on or before June 5, 2025 and receive a full refund minus a $500 per-person service fee. On or after June 6,v2025 there is a 50% cancelation fee. On or after July 21, 2025 there is a 100% cancelation fee.

    We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or of the trip being canceled (see our Terms and Conditions for full details).
