You’re in a medieval cider house, angling your glass just so to catch every last drop of the amber elixir flowing from the spout of an enormous wooden barrel. The past few days here in the Basque Country have been a dizzying feast for all your senses: world-class contemporary art in Bilbao; medieval stone castles perched above the sea; al fresco lunches of sizzling lamb roasted over grapevines and washed down with wine from the vines clambering over the fence next door. There’s so much more to come — an epic pintxos crawl through the old town of San Sebastián; cooking classes and fish markets and wineries galore — but for the moment, in this timeless place, all you want is to stand still and breathe it all in. You take another sip of cider, relishing its tannic, woodsy funk. After all, if there’s one thing you’ve realized over the past few days, it’s that life in the Basque Country is meant to be savored, not rushed.
We’re traveling alongside chef Chris Arellanes, an acclaimed chef and a longtime lover of the Basque Country. Chris learned to cook at the California Buddhist monastery where he grew up — and then moved on to New York Michelin meccas including Per Se, Eleven Madison Park and the Nomad. In these elite kitchens, his mentors reinforced teachings that Basque cooks know inherently: That food is the thread that binds people, landscape, and tradition together into a living, breathing cultural fabric.

3 Reasons to Travel with Chris Arellanes
Chris believes that eating well is integral to good health, and that the food we eat should provide more than just a momentary reprieve from hunger. Together, we’ll see how these ideas intersect with local traditions, from the winding alleyways of Bilbao, to the hillside vineyards of Rioja and village cider houses outside San Sebastian.

The Best Medicine
Chris learned to cook from his grandmother, who prepared nourishing, plant-based menus grounded in Buddhist spiritual practices. Around tables in the Basque region, we’ll relish the gorgeous simplicity of clean cuisine.
Pure and Simple
Basque cuisine is known for allowing fine ingredients to shine with very little preparation. Chef Chris takes a similar approach in his kitchens, and we can’t imagine a more ideal place than Northern Spain in which to dive into this mindset.
Communal Kitchen
The people of Northern Spain thrive on the strength of their community bonds. With Chris, we’ll reach out and connect with this culture, cooking, eating and learning together in an open and soulful exchange.

Where We Sleep

Traditional architecture meets contemporary design. Enjoy the understated luxury and sophistication of our boutique Basque Country hotels.

The Artist Grand Hotel of Art
BilbaoSituated between the Fine Arts Museum, Iberdrola Tower and Euskalduna Palace, this design-forward hotel is an art lover’s destination unto itself. It’s located just a stone’s throw from almost everything Bilbao is known for, and so close to the Guggenheim that it almost feels like Jeff Koons’s 43-foot-tall puppy is about to charge the lobby. Make like a local and throw back a cocktail on the beautiful rooftop terrace.

Hotel Viura
Álava, RiojaThis 33-room boutique hotel is an architectural masterpiece, a striking cubic structure that seems to have fallen from the heavens right onto a carpet of lush green vineyards. Tucked away into the tiny hamlet of Villabuena de Álava, this is both a sumptuous wine country retreat and a throwback to village life, a place where time is measured in church bells and birdsong. Not surprisingly for wine country, the hotel cellars are stunning — prepare to be seduced.

Zenit Convento San Martin
San SebastiánLocated just off La Concha, the seaside promenade that forms the beating heart of San Sebastián, this serene hotel, housed in a beautifully restored 16th-century convent, is the perfect spot from which to explore the city’s vibrant Old Town — as well as a welcome retreat at the end of the night, when the vaulted ceilings and stained-glass windows of the lobby bar feel particularly magical.
