Day 1: Tokyo

May 7, Tue

Welcome to Tokyo, the world’s greatest food city, and home to more Michelin stars than any other city (even Paris). There’s only one way to start an adventure through Japan, and that’s a sprawling welcome banquet specially curated by one of Tokyo’s finest.

Following a leisurely walk, we’ll arrive at Kisaiya Hide, a hidden gem where we’ll savor a sake tasting experience, immersing ourselves in the intriguing world of Japanese spirits.

The highlight, however, is dinner where Chef Hide’s culinary prowess shines. Expect a family-style feast featuring sashimi, nasu salad, and regional specialties, with the signature dish Taimeshi, a captivating representation of Shikoku’s Ehime Prefecture.

Day 2: Tokyo

May 8, Wed

We begin in lively Kappabashi, otherwise known as ‘Kitchen Street.’ We’ll wander its zigzagging streets, taking in the sights and smells of this incredible food-centric neighborhood. As we start to dream about lunch, Shota will usher us through a back-door in Asakusa for a hands-on ramen workshop. Our expert mentors will guide us through crafting delicious ramen bowls, followed by a mouthwatering lunch that’ll leave our taste buds dancing with joy.

Next, it’s off to the Shibuya Sky Viewing Platform to take in Tokyo’s incredible skyline from a whole new perspective. Once we soak up the panorama, we’ll gradually descend our perch in the sky, and make our way to the iconic Shibuya crossing.

As the sun sets, dinner is a private affair at Daisuke Shimazaki’s  Sushi Yuu. Chef Daisuke is an up-and-coming culinary star. His quiet backstreet restaurant is small and intimate; his sushi and sashimi are close to perfection.

Day 3: Tokyo to Izu

May 9, Thu

We’ll start the day with an exhilarating ride on the Shinkansen (bullet train) to Yugawara, where our escapade unfolds. A special experience awaits as we visit Shota’s family inn. Together, we’ll roll up our sleeves and with the help of estate-grown herbs and local ingredients from the market—make a truly extraordinary lunch.

Our journey continues, and en route to Izu, we’ll be treated to awe-inspiring views of Mount Fuji from a cable car at the Mt. Fuji Viewpoint. Not long after, we’ll arrive at our traditional ryokan to indulge in the rejuvenating hot springs, surrounded by the serene beauty of nature.

The day culminates with a delightful group Kaiseki meal, a true culinary masterpiece, and an opportunity to dress in traditional yukata robes, embracing the essence of Japanese culture.

Day 3: Tokyo to Izu Highlights

Day 4: Izu to Kyoto

May 10, Fri

We’ll begin our day with a fascinating visit to a wasabi farm in Izu, renowned for its abundant rainfall, the perfect condition for growing this prized delicacy. As we learn about the intricate process of wasabi cultivation, you’ll even have the unique opportunity to harvest your own wasabi and learn the art of grating it, adding a dash of expertise to your culinary skills.

Later, we’ll hop on the bullet train to Kyoto, where our stunning hotel awaits. The evening is yours to embrace the magic of Kyoto at your own pace, whether it’s exploring the city’s vibrant streets or simply unwinding in the tranquil surroundings of the property.

Day 4: Izu to Kyoto Highlights

Day 5: Kyoto & Osaka

May 11, Sat

Rise and shine for an early morning transfer to the Kamigamo shrine, where we’ll participate in a captivating rice ceremony, immersing ourselves in this time-honored tradition.

Next, we’ll head to the picturesque Arashiyama on a cultural journey visiting Tenryu-Ji, the enchanting bamboo forest, and the serene Gio-Ji temple. Here, we’ll pause for an authentic tea ceremony at Okochi Sanso just to make sure we slow down and really take in the enchanting surroundings.

Our journey continues as we transfer to the bullet train to Osaka, where a world of flavor awaits. Osaka’s reputation as the culinary heart of Japan is built on its concentration of Michelin-starred restaurants (99 at last count), its excellent street-food scene, its openness to foreign cuisines, and two delicious indigenous snacks: okonomiyaki (yam-flour pancakes filled with seafood, pork, kimchi) and takoyaki (octopus doughnuts). We’re here specifically for the street foods — our dinner is a delicious movable feast on foot.

Day 5: Kyoto & Osaka Highlights

Day 6: Osaka

May 12, Sun

Today is truly special as we are traversing Shota’s old stomping grounds. Our journey takes us to Sakai, where a special encounter awaits with a skilled traditional knife maker. Witness the craft as Shota and the craftsman forge a knife together, and learn all about the centuries-old history of Sakai knife and samurai culture.

We’ll continue our exploration with a visit to the prestigious Tsuji Culinary Institute, immersing ourselves in the artistry of Japanese culinary expertise and walking the same campus that Shota walked when he was first starting out as a chef.

After some free time in the afternoon, we’ll gather for an exceptional farewell dinner. Thanks to his connections in Osaka, Shota has helped us arrange a truly special reservation. Amidst the warm ambiance, we’ll raise our glasses in a heartfelt toast. Here’s to the camaraderie forged, the laughter shared, and the spirit of adventure that has made this experience so unforgettable.

Ancient traditions are alive and well at this luxurious 150-year-old ryokan, its traditional architecture and sleeping quarters providing an oasis of calm and a respite from the cares of the world. Legend has it that this ryokan's on-site hot spring was brought forth 1,200 years ago to allow a devoted son to wash his ailing father’s back. Today the gentle, mildly alkaline waters continue to soothe the spirit.

  1. What does the price include?

    Six nights at unique four- and five-star accommodations; private travel for all day trips and excursions; arrival and departure airport transfers; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; all gratuities for tour leaders and local guides.

  3. Where does the trip start and end?

    Our adventure begins in Tokyo, Japan. There are two airports servicing Tokyo – Narita International Airport (NRT) and Tokyo International Airport, Haneda (HND). Our adventure ends in Kyoto, Japan. Your flight home from Kansai International Airport (KIX) should be scheduled to depart at 2pm or later on our final day.

  4. What travel documents are needed?

    US citizens are not required to have a visa to enter Japan for stays up to 90 days. The only requirement is a passport that is valid for the entirety of your stay, but we recommend that your passport is valid for 6 calendar months beyond your planned departure date.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers, there is a $3,000 single-supplement fee—paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.

  6. Who is going on this trip?

    This adventure has a maximum of 12 guests. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading this trip?

    This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. What is the cancellation policy?

    You may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.

  9. Do I need Travel Insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
