You’ll soon be eating fresh-from-the-earth truffles, and your dessert is topped with hazelnuts foraged a mile down the road. Flour + Water chefs Ryan and Thomas are known for creating gorgeous, handcrafted Italian food in the Bay Area—just ask Esquire, Food & Wine and Bon Appetit. Their experiences living and cooking in Italy inform every dish, lending soulful simplicity to tortellini in brodo and whorls of egg-rich tonnarelli with guanciale and preserved lemon. For their second Modern Adventure (their 2023 romp through Sicily & Naples sold out in scant hours), we’re heading to Piedmont for a week of big wines, harvest pastas and fresh truffles. Over the River and Through the Woods
Fall is a special time in northern Italy. As the trees turn to gold, Ryan and Thomas will converse with locals as they roast hazelnuts and venture deep into the misty forests of the Langhe in search of white truffles, always returning to the table to celebrate the gifts of the season.

In San Francisco, diners line up daily for their hand-crafted pastas and pizza, to see what the fuss is about, and we’re honored to be able to spend a whole week by their side!

The dining experience at Flour + Water has been deeply intertwined with wine since the very beginning, and Piedmont is a viticultural destination like no other. At the peak of harvest season next fall, we’ll dive deep with the winemakers crafting fine Barolo and Barbaresco wines — uncorking big flavors, rich aromas and new friendships with every bottle.
Giorgio was a delight, so warm and open. Traveling with him in his native Piedmont was such a privilege.

What does the price include?
Six nights at boutique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; departure airport transfer; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

What does the price not include?
International roundtrip airfare to and from Italy; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

Where does the trip start and end?
Our adventure begins and ends in Torino, Italy. The closest airport is the Torino International Airport (TRN). We recommend arriving one day early to ensure you’re at our starting point on time.

What travel documents are needed?
US citizens are not required to have a visa to enter Italy for stays up to 90 days. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Italy.

Do I need to pay a solo traveler supplement?
For solo travelers, there is a $2,000 single-supplement fee—paid at the time of booking to secure a private room. These spots are extremely limited and available on a first come, first serve basis.

Who is going on this trip?
This trip will have no more than 16 guests, plus our Modern Adventure team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

Who is leading the trip?
This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

What is the cancellation policy?
For group departures booked on or after January 1, 2025, you may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee.
For group departures booked before January 1, 2025, you may cancel more than 90 days before departure and receive a full refund minus a $500 per person service fee. If you cancel on or after 90 days in advance, there is a 50% cancellation fee. On or after 45 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.

Do I need Travel Insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
