You’ll soon be eating fresh-from-the-earth truffles, and your dessert is topped with hazelnuts foraged a mile down the road. You take another sip and whisper salute to slowing down, to the stories that emerge with every course, to every small moment of this unforgettable experience.

Flour + Water chefs Ryan and Thomas are known for creating gorgeous, handcrafted Italian food in the Bay Area—just ask Esquire, Food & Wine and Bon Appetit. Their experiences living and cooking in Italy inform every dish, lending soulful simplicity to tortellini in brodo and whorls of egg-rich tonnarelli with guanciale and preserved lemon. For their second Modern Adventure (their 2023 romp through Sicily & Naples sold out in scant hours), we’re heading to Piedmont for a week of big wines, harvest pastas and fresh truffles. Over the River and Through the Woods

Fall is a special time in northern Italy. As the trees turn to gold, Ryan and Thomas will converse with locals as they roast hazelnuts and venture deep into the misty forests of the Langhe in search of white truffles, always returning to the table to celebrate the gifts of the season.

Together, Ryan and Thomas have received multiple James Beard Foundation Awards nods, as well as recognition on the Forbes’ “30 Under 30” and Food & Wine’s “American Icons Empire Builders” lists. In San Francisco, diners line up daily for their hand-crafted pastas and pizza, to see what the fuss is about, and we’re honored to be able to spend a whole week by their side!

The dining experience at Flour + Water has been deeply intertwined with wine since the very beginning, and Piedmont is a viticultural destination like no other. At the peak of harvest season next fall, we’ll dive deep with the winemakers crafting fine Barolo and Barbaresco wines — uncorking big flavors, rich aromas and new friendships with every bottle.

Day 1: Torino

October 13, Mon

Welcome to Torino! We begin the only way we know how—immersing ourselves into the electric buzz of this lively and ancient metropolis.

As dusk ignites the city and the clatter of small plates echo off the squares, we turn our attention to vermouth. Far from a simple ingredient in a Negroni or Manhattan, vermouth is a revelation here in its birthplace. This evening we sample several distinct recipes while learning how the drink itself has shaped city life since the first vermouth bar opened in 1786.

Alas, the vermouth is but an appetizer to our elegant welcome dinner. In quintessential Torino fashion, we’ll wander into one of the city’s most iconic kitchens to savor their hyperlocal specialties and toast the beautiful road ahead.

Day 2: Torino & Around

October 14, Tue

This morning we’ll wind our way through Torino’s famed cafes and mom-and-pop pasticcerias, making sure to stop at the iconic Bicerin cafe. It’s a decadent indulgence of edible art and the perfect way to begin the day. 

Following our morning dolci, we’ll make our pilgrimage to the countryside where our Piedmont wine education begins. Here, within one of Italy’s most heralded appellations, we’ll sample (among others) the eclectic and volatile Nebbiolo grape, originally planted by the Romans. 

Next up, one of the most unique places in all of Piedmont: Ivrea, a mid-century planned industrial utopia, and a shining example of the ideals of the Movimento Comunità that pervaded Piedmont in the 1950s and ’60s. We’ll pass by the headquarters of Olivetti, the makers of coveted typewriters, and marvel at the blueprints of this ambitious social experiment.

Dinner tonight is simple and magical; thanks to host, Stefan Giunti, a local sommelier, we’ll be treated to a meal and wine pairing—the food and wine both farmed just down the road. 

Day 3: Costigliole d’Asti & Langhe

October 15, Wed

Today, we find ourselves standing in awe as we learn the art of soft cheese with a master cheesemaker. In the villa of Costigliole d’Asti, we’ll work our way through fresh mozzarella and burrata, tasting as we go, of course.

And now for some estate-grown wine with that cheese. Just down the road in Monferrato, we’ll visit Cascina Roera for an immersive vineyard visit. As we’ll quickly find out, the Cascina isn’t just any winery. The small-batch operation preaches minimal intervention in the hilltop vineyards.

After checking into our new hotel, we’ll take some time to relax. Dinner tonight is on your own.

Day 4: Pollenzo & Alba

October 16, Thu

This morning, we’ll step outside our hotel to explore the Roman amphitheaters and temples next door and learn about the rich history of Barolo and how this small, beautiful region became the epicenter of Piedmont’s food and wine culture. We’ll then move on to the University of Pollenzo for a tour of its historic campus before descending into their coveted Wine bank, which features more than 100,000 bottles of Italy’s rarest and most celebrated wines.

Next, we’ll journey to the medieval gem of Alba, renowned as a haven for gourmands. As we wander through its historic streets, we’ll delve into the city’s rich culinary heritage, celebrated for its truffle cuisine and as the birthplace of Nutella. Our visit to Alba promises to be a sensory delight, offering ample time to immerse ourselves in its charming atmosphere.

After a stunning lunch, we’ll make our way to a small winery in the village of Neive.  Our tastemakers and the resident winemakers will lead us through a tasting, and thanks to the smoky varietals of the Barbaresco appellation, we’ll practically float back to the hotel.

The late afternoon is yours to embellish. You can find us at the local trattoria nursing an Aperol spritz and reflecting on the amazing journey so far. Finally, we’ll gather for a special pizza night, with our tastemakers behind the pizza oven, creating one-off pies for everyone to enjoy.

Day 5: Langhe & Around

October 17, Fri

The hunt is on for truffles. This morning we’re lacing up our walking shoes and experiencing the legendary terroir of Langhe. We start with a bonafide, Piedmont-style truffle hunt. Led by an expert trifolau, we’ll retreat to the forest with specially trained dogs for a guided experience on locating, identifying, and cooking up these flavorful fungi. 

Hunting for truffles is hard work, but don’t worry a sumptuous award is in store. We’ll meander down the road to one of the most revered kitchens in all of Piedmont, Chef Marco Battaglino’s Osteria Battaglino. We’ll treat ourselves to a mid-day vermouth, and a few courses of pasta-heavy specialties.

What’s next? One of the region’s most picturesque and biodynamic wineries, San Fereolo. After a private tasting of their award-winning vintages—widely considered the best representatives of Dogliani terroir—we’ll make our way back to the hotel just in time for sunset. The evening is yours to enjoy. See you bright and early tomorrow.

Day 6: La Morra & Around

October 18, Sat

After a dreamy breakfast in our hotel, our culinary exploration takes us to the picturesque family-owned organic hazelnut farm. Here, we’ll delve into the intricate process of merging chocolate and hazelnuts, experiencing firsthand the creation of some of Italy’s most beloved flavors.

We continue with a panoramic drive towards Monforte entering the cellar of Sara Vezza’s Josetta Saffirio winery, in the heart of Langhe, to discover their wines paired with some local delicacies”

It’s now we rest, for our farewell dining experience is truly incredible. We’ll don aprons together, and at the behest of a local culinary icon, we’ll learn to roll our own pasta, slice and sauté our own truffles into a dish as traditional and refined as Piedmont itself. We’ll sit down together and toast to an incredible week of discovery and exhilaration.

Day 7: Torino Departures

Arrivederci! All beautiful things must end, and so we go our separate ways. After a leisurely breakfast, we’ll transfer to the Torino airport to catch our flights onward and home. Until next time: Ciao!

  1. What does the price include?

    Six nights at boutique four- and five-star accommodations; private travel for all day trips and excursions; private tours with local guides and cultural experts; exclusive VIP access and tastings; guided activities, adventures and expeditions; departure airport transfer; entrance fees; daily breakfasts, most lunches and dinners; local beverages with meals.

  2. What does the price not include?

    International roundtrip airfare to and from Italy; travel insurance; transportation to the trip’s starting point; activities not included in the trip itinerary; hotel incidentals including room service, laundry service and hotel bar tabs; food and beverages not included in itinerary; gratuity for tour leader.

  3. Where does the trip start and end?

    Our adventure begins and ends in Torino, Italy. The closest airport is the Torino International Airport (TRN). We recommend arriving one day early to ensure you’re at our starting point on time.

  4. What travel documents are needed?

    US citizens are not required to have a visa to enter Italy for stays up to 90 days. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Italy.

  5. Do I need to pay a solo traveler supplement?

    For solo travelers, there is a $2,000 single-supplement fee—paid at the time of booking to secure a private room.  These spots are extremely limited and available on a first come, first serve basis.

  6. Who is going on this trip?

    This trip will have no more than 16 guests, plus our Modern Adventure team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.

  7. Who is leading the trip?

    This trip is led by an expert Modern Adventure trip leader. They’re an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.

  8. What is the cancellation policy?

    For group departures booked on or after January 1, 2025, you may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee.

    For group departures booked before January 1, 2025, you may cancel more than 90 days before departure and receive a full refund minus a $500 per person service fee. If you cancel on or after 90 days in advance, there is a 50% cancellation fee. On or after 45 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.

  9. Do I need Travel Insurance?

    We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
