Award-Winning Chef & Native Son of Mexico City, Santiago Gomez
You’ve just wandered into the local market, yet somehow, it feels like you’ve stumbled upon a different dimension — one in which color and texture reign supreme. Here, line cooks flash in lightning-fast streaks, while towers of marzipan vie for space with sticky tarugos and mangos the color of the sunshine. This week you’ve met chefs and artisans at the peak of their craft; you’ve contemplated Aztec stone sculptures and wandered the halls of Frida Kahlo’s candy-colored home. Later today, you’ll float alongside mariachi bands in Xochimilco’s ancient canals, but right now, immersed in the electric hum of market life, you feel it deep in your bones: this is Mexico City, exhilarating, intimate, and exquisitely high-definition.
Trip Highlights

3 Reasons to Travel with Santiago Gomez
Chef Santiago Gomez worked for international powerhouses including Nobu Matsushisa and Daniel Boulud before opening Atlanta’s acclaimed Palo Santo in 2022. In this low-lit, sensual space, he channels the energy and flavors of his hometown Mexico City through the lens of his global travels. On our trip, he’ll take the party to Mexico City, where we’ll relax and recharge over five days of exquisite dishes, spontaneous detours and nuanced spirits.

Going Home
Recalls fondly his youth in Condesa, every visit to Mexico city is a homecoming and a chance to reconnect with his roots. These visits also inspire his own creative growth, creative growth, as he tastes his way through bold, remixed recipes of traditional Mexican dishes.
It’s All On the Table
Chef Santiago runs a “no rules” creative kitchen. He embraces ideas from his cooks and collaborators, blending Latin American flavors, ingredients, textures and techniques in novel ways to create modern dishes that build on Mexican culinary traditions. No detail is too small, no idea too strange, and we can’t wait to explore Mexico City’s blooming culinary scene through his lens.
Positive Vibrations
In Latin America, people burn Palo Santo (a resinous, fragrant “holy branch” in the same tree family as frankincense and myrrh) to cleanse the air of dark energy or lingering rancor. Chef Santiago named his Atlanta restaurant for this plant and aims to cultivate an atmosphere where his guests can slow down and savor every entree.
“The amount of culture and history our local guide provided surpassed my expectations. I learned more in four days than I would have with a month on my own.”
I loved how incredibly knowledgeable our local guide was.
Being in a like-minded group of curious travelers pushed me outside my comfort zone to try new foods, explore new perspectives and even fly in a hot-air balloon over the pyramids!
