Dano and Bethany Heinze fell in love while working at Sean Brock’s long-loved Charleston restaurant McCrady’s before heading west to work for LA titans Jon Shook and Vinny Dotolo. At Vern’s (a New York Times top-50 restaurant), they espouse the kind of homespun, place-based cookery and warm service that’s refined but easy to adore. This summer, they’ll meet us in Bilbao for a week of world-class gastronomy, fine wines and late-nite pinxtos.
In Northern Spain, history runs long. The buildings are old, the culture even older, and the people roll with an unfettered gravitas that cares little for fleeting trends. When Dano and Bethany travel, they find communion in well-worn, timeless spaces where echoes of the past shine through the heirloom silver glow.
Dano is known for crafting deeply satisfying, elemental plates that showcase the perfection of a carefully boned fish or just-picked summer plum. Next August, we’ll sip natural wines as vineyards approach harvest, and relax into “zero-kilometre” meals in a place where fresh, natural and local are regional defaults.
Meals at Vern’s tend to unfold with the casual ease of a perfect dinner party with fun friends. In the dining room, Bethany and her staff tend to every detail — topping off wines, chatting about ingredients, bringing coffee when the evening wears long — in a way that’s polished but natural.

Located just off La Concha, the seaside promenade that forms the beating heart of San Sebastián, this serene hotel, housed in a beautifully restored 16th-century convent, is the perfect spot from which to explore the city’s vibrant Old Town — as well as a welcome retreat at the end of the night, when the vaulted ceilings and stained-glass windows of the lobby bar feel particularly magical.

Our adventure begins at the Hotel Domine Bilbao. The closest airport is Bilbao Airport, with San Sebastián Airport also an option for arrivals. Private transfers are included for arrival and departure from either Bilbao or San Sebastián Airports.
US citizens are not required to have a visa to enter Spain for stays up to 90 days. Your passport must be valid for three months beyond your planned departure date, though we recommend that your passport be valid for 6 calendar months beyond your planned departure date from Spain. For solo travelers, there is a $2,900 single-supplement fee—paid at the time of booking to secure a private room. These spots are limited and available on a first-come, first-served basis.
Our adventures typically have between 10 and 18 guests, and our Modern Adventure Team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.
This trip is led by an expert Modern Adventure Trip Leader. They're an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most 'Cancel For Any Reason' policies must be purchased on the date of your initial deposit.
You may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation). If you cancel on or after 119 days in advance, there is a 50% cancellation fee. On or after 59 days in advance, there is a 100% cancellation fee. See our full terms and conditions for details.
