Over the past decade, Gregory Gourdet has become one of Portland’s most distinctive and beloved chef personalities, from his ultra-marathoning to inventive cooking. His place as a Top Chef finalist in 2015 secured him a spot in the foodie limelight, but that was only the beginning. Join us and Gregory in Mexico for an energized tour of heritage and flavor.
As one of only two Portlanders ever to compete on Top Chef, Gregory wowed the judges on his season’s Mexico finale, with his red moles and ancho-tamarind sauces. He’s a guy who likes to dive in and go big.
Gregory’s family is Haitian. So naturally, dinners at home are filled with traditional Caribbean flavors. He’s traveled back to Haiti to cook and recently staged a Haitian dinner at the James Beard House. He’s taking major strides in bringing his culture’s narrative to the food world.
After years of honing his talents at restaurants, Gregory’s next endeavor is opening his own spot in Portland: a wood-fired, globally influenced concept focused on bringing iconic Haitian favorites to life. We can’t wait.

Our adventure begins and ends at the El Callejon Hotel in Oaxaca, Mexico. The closest airport is Oaxaca International Airport (OAX). On our final day, Modern Adventure will organize a complimentary transfer to OAX for all guests who's flight home departs at 1pm or later from OAX airport.
US citizens are not required to have a visa for tourist visits to Mexico, but are required to show a valid US passport. It is recommended that your passport is valid for six months after your travels are over. On arrival in the airport, you will be issued a visitor’s permit, known as a FMM (Forma Migratoria Multiple). For citizens of other countries, please check with the Mexico Embassy or Consulate for information and requirements.
For solo travelers, there is a $2,000 single-supplement fee—paid at the time of booking to secure a private room. If you would like us to pair you with a roommate, that option may be available upon checkout—these spots are limited and available on a first-come, first-served basis.
Our adventures typically have between 10 and 20 guests, and our Modern Adventure Team. Our experiences are fun and inclusive and you can expect to be joined by a diverse group in terms of age, background and interests—including solo travelers, couples and friends traveling together. This adventure is for travelers age 18 and above.
This trip is led by an expert Modern Adventure trip leader. They're an experienced travel guide, a representative of Modern Adventure and your go-to person for questions or concerns on the trip. We’ll be joined throughout our adventure by local, expert guides who are deeply knowledgeable with respect to local cultures, customs and history and are passionate about sharing that with us.
You may cancel 120 days or more before departure and receive a full refund minus a $1500 per person service fee ($500 of which may be retained as a future travel credit, valid for one year after cancellation).
