Another bite won’t hurt. Let alone two or three. You’re marveling at the farm-to-table feast on the long table—one you helped create alongside an incredible chef. Music of a meandering mariachi floats past your ears. You take in the sights and the sounds, and wash it down with a bit of mezcal and toast to everything ahead: Zapotec culture, modern art and design, the traditional flavors of roasted ground chiles, handmade tamales and spicy moles. This is Oaxaca—and there’s nothing comparable.
Your traveling companion is Chef Cheetie Kumar. She’s an award-winning chef who also happens to shred on guitar. Garland, her North Carolina restaurant, is a whirlwind of Southern and Indian inspiration. She’s a prime example of embracing multiple passions and maintaining them in a kinetic and vibrant balance. She’s been dreaming of Oaxaca and is ready to sample anything and everything in the name of culinary exploration.
If you travel to stimulate all of your senses, this trip is for you. We’ll wander colorful markets and prepare a farm-to-table feast, taste incredible street foods, then wash it all down with the best mezcals. All the while, connecting with shamans and weavers, local artists and Zapotec families. This is how you savor Oaxaca.

3 Reasons to Travel with Cheetie Kumar
Cheetie Kumar can rock it in the kitchen. The award-winning chef is completely self taught, having studied the craft of cooking while pursuing her career as a guitarist. These days, she creates harmony in her North Carolina restaurant, Garland, with flavors inspired by her Indian heritage. Her joyful flair makes her the perfect companion to explore vibrant Oaxaca and all the local flavors.
Music to Our Ears
Though Cheetie has fully embraced her culinary career, she still plays guitar opposite her husband in their band, Birds of Avalon. She also owns the venue above her restaurant, always keeping music a part of her life.
Heart & Soul
Cheetie grew up in India and her cooking is largely inspired by her heritage. She uses traditional techniques learned from her mother, adding a distinct, soulful Southern flair to her own dishes.
Cheetie is inspired by the food she cooks and loves supporting local farmers. She believes good cuisine is about connection, and many of the ingredients she purchases in Raleigh remind her of what her mother would purchase in India.
