You’re knee-deep in peppery arugula and wine-toned aubergines, marveling at the kaleidoscope of bright vegetables and sun-ripened fruit that thrive on this family estate. As you look beyond the garden and take in the quiet majesty of the surrounding Tuscan countryside, you can’t help but feel that this organic farm might just be the epitome of Italy’s iconic cuisine: fresh, seasonal, and exquisitely local. In fact, this whole week has been a triumph of flavor and craft. You’ve sipped award-winning vintages in revered vineyards, rolled pasta dough in the heart of Siena. In the days to come, you’ll explore the fine art of Roman pizza and drink in the magic of the Colosseum at night. Dazzling and untamed, this is Italy in full force. You won’t forget a moment.
Joining you on this epic journey is Amanda Cohen, the path-paving, trailblazing, positively pioneering James Beard-nominated chef. Amanda is the mastermind behind Manhattan’s Dirt Candy, the Michelin-starred restaurant that ignited the vegetable-forward movement in 2008 and to this day remains the darling of New York’s dining scene (New York Magazine still considers it “The Absolute Best Restaurant on the Lower East Side”). But wait—there’s more. First in New York to eliminate tipping and share profits with restaurant staff? Amanda. First to pen and publish a graphic-novel cookbook? Also Amanda. A true visionary and master of her craft, Amanda is the ultimate guide to Italy’s most stunning culinary traditions.
If you like your food and culture layered over thousands of years of history, this trip is for you. From the buzz of Florence’s markets to the Tuscan countryside, from serene gardens to the glamor of Rome by night, we’ll explore the most iconic corners of Italy from every angle, tasting everything as we go.

3 Reasons to Travel with Amanda Cohen
There’s more to Amanda Cohen than her restaurant Dirt Candy, though Dirt Candy is pretty cool, too—even historian Paul Freedman agrees (see his book, Ten Restaurants that Changed America). But we digress: Amanda might be a James Beard-nominated chef, but she’s also an advocate and innovator with a soft spot for contemporary art.

Art Enthusiast
When she’s not competing on Iron Chef or volunteering for the non-profit No Kid Hungry, Amanda seeks out art—contemporary art, to be exact. She’s a regular at Venice’s Biennale.
Next Level Veg
With Amanda, there is no limit when it comes to vegetables. Her reuben turns the humble beet into a smokey, peppery pièce de résistance, while her tomato cupcake is a work of art.
Comic Book Queen
Amanda’s innovations go beyond vegetables—her cookbook was the first to bridge culinary and comic book worlds, and she introduced a more equitable wage system for NYC restaurant workers.
Your Experience

Florence, Siena, Tuscany, Rome

“Some of the most fun I've had in Italy is cooking.”
Where We Sleep

Beautifully curated accommodations—we’ll immerse ourselves in contemporary art in Florence, enjoy the quiet beauty of the Tuscan countryside, and feel like we’re part of the vibrant story of Rome
Gallery Art Hotel
FlorenceSet in a quiet courtyard just steps from the Ponte Vecchio, this intimate boutique hotel was dreamed up by a Florentine architect as a home away from home for art lovers, and its pleasingly minimalist interior doubles as a contemporary art space featuring rotating exhibits by the likes of Andy Warhol, Dave Lachappelle and Roberto Koch. Make like a local and head to the buzzy, indoor-outdoor terrace bar for exceptional cocktails.

Monteverdi Tuscany
Castiglioncello del TrinoroOutside your window, sprawling gardens give way to medieval streets and art galleries. Inside, every detail—from bed frames to the stone-hewn spa—is pure Tuscan elegance. The property is built in and around a medieval Tuscan village. While preserving the exterior facades, designer Ilaria Miani brings a modern touch without sacrificing any authenticity. Terraced gardens and a pool add to the charm.

Anantara Palazzo Naiadi Hotel
RomeMore than 2,000 years of Roman history are here in one gorgeous space. Ancient ruins of the baths of Diocletian are visible beneath the property's glass floors, and there’s no more quintessentially Roman setting than the hushed, soaring lobby. The hotel has every comfort you'd expect, and some that are wonderfully unexpected (like sunset cocktails at the poolside rooftop bar).

Each hotel became more beautiful, each quaint and modern and staffed by the greatest humans ever.
Every day we had a new surprise that blew my mind!
I loved the efficiency, service, quality and personal touch... an amazing time!

For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.

We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (see our Terms and Conditions for full details).
